Hey there! I hope you are all having a great week. My week has been great, and I am topping it off with one of my favorite risotto recipes. If you haven’t tried risotto, it is like upscale cheesy rice. Kids love it, and you can add so many fun flavors. My recipe is kid-friendly and is one of my favorite dinners to make.

The other day, we had a large family breakfast and served smoked salmon for the bagels. The salmon didn’t all get finished, and it had been hanging out in our refrigerator for a long time. I am unsure how long smoked salmon will keep, so I needed a recipe to use it up quickly.

I love how the smokiness of the salmon flavors this risotto. It is a tasty meal, and you can add any vegetables you like! Ingredient Notes:

  • Arborio Rice – I am glad this rice is gluten-free because it has become our family staple meal.
  • Chicken Broth – Feel free to use vegetable broth if you prefer. I advise using low-sodium chicken broth.
  • Smoked Salmon – I use wild smoked salmon in this recipe. There isn’t a huge flavor difference, but I try to avoid farmed fish.
  • Garlic – Fresh is best for risotto.
  • Parmesan Cheese – I use grated and not shredded. See the allergen section above for a dairy-free option.
  • Shiitake Mushrooms—Any mushroom is fine in this recipe, and you can use any vegetable you like.
  • White Wine – Use a cheap wine. There is no need to use expensive wine for cooking.
  • Heavy Cream – You only need a little, but it adds to the creaminess. See Allergen Information below for dairy-free options.
  • Olive Oil – I prefer olive oil because that is what is traditionally used in risotto.
  • Salt and Pepper – To taste.
  • Scallions – Optional for garnishing.

It doesn’t take too long to make risotto. For best results, you want to use arborio rice. Arborio rice is a white, short-grained Italian rice. This rice is naturally very starchy, making it nice and sticky for risotto. We are big salmon eaters. If you love salmon as well, try these crispy Grain-Free Salmon Cakes.

Step-By-Step Directions:

Step 1: Heat the olive oil in a 12-inch cast-iron pan over medium heat for 1-2 minutes so that the skillet gets hot. Add the uncooked arborio rice to the pan and cook it until it is all coated with the olive oil (about 2-3 minutes).

Step 2: Add in the shiitake mushrooms, scallions, and white wine. Stir and cook for 3 minutes.

Step 3: Chop up the smoked salmon and add it to the skillet. Gradually add chicken stock to the pan, a little at a time. Turn the temperature of the stove down to medium-low. Add more liquid, a little at a time, as the liquid cooks down until the rice softens.

Step 4: When the rice is softened, it is close to ready! Add the cream and parmesan cheese to the skillet and stir to melt the cheese. Serve this salmon risotto hot.

Can you omit the wine?

Cooking rice with wine adds flavor, but you can still get a lot of flavor if you omit the wine.

Can you use other meat and seafood instead of salmon in this risotto?

You can use any protein you like in risotto. I also love using shrimp and chicken.

How do you store leftover risotto?

Store the leftovers in an airtight container in the refrigerator for up to 3 days. I do not recommend freezing leftover risotto because it changes the texture of the rice.

Ingredients
  

  • 1 ½ cups arborio rice * see note
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • ½ cup smoked salmon * see note
  • ¼ cup scallions optional, chopped
  • ½ cup white wine
  • 14 fluid ounces low sodium chicken broth * see note
  • salt to taste
  • 8 fresh shiitake mushrooms sliced
  • ¼ cup heavy cream
  • ¼ cup parmesan cheese grated

Instructions
 

  • Preheat a cast iron skillet on medium heat with the olive oil. Add rice and toss to coat the rice in the oil. Let the rice and oil cook for 1-2 minutes. Quickly add the wine and cook until the wine has cooked in.
  • Add scallions and mushrooms and saute for 3 minutes. Lower temperature to medium-low.
  • Add ½ cup of chicken broth and allow the broth to cook down. Turn the stove down to low. Repeat this process of adding chicken broth and cooking it down until rice starts to get tender. Add smoked salmon after adding liquid 3 times.
  • When the rice is tender, add cream and parmesan cheese. Mix well. Cook down until rice is creamy. Add salt to taste.

Notes

  1. I used low sodium chicken broth. You can also use vegetable broth in this recipe.
  2. Be sure to use arborio rice as that is the best rice for risotto. It has a higher starch content to allow it to stick more and create a creamier sauce.
  3. Add any vegetables you like to this recipe. My kids love when I add peas to risotto.
  4. When shopping for smoked salmon, I prefer to use wild-caught. There are a lot of great brands of wild-caught smoked salmon. My family liked DuckTrap and the one we find at Trader Joe’s. The least expensive smoked salmon is at Costco.
  5. If you don’t have smoked salmon, you can also use leftover cooked salmon in this gluten free risotto recipe.
  6. This rice dish will keep fresh for up to 4 days in an airtight container in your refrigerator.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.
