Use fresh ingredients - especially the veggies

I love to add vegetables to my quiche. I recommend using fresh veggies, but frozen are okay too!

Mix up the crust:

The first step is to make your crust. Take the smooshed crackers and add the rest of the crust ingredients (eggs and cheese). Mix well.

Prepare the crust:

Press the cracker crust into a greased pie tin. I use the back of a spoon to press it in so it stays firm.

Add the fillings:

Add all of the fillings and use spread them around so they are evenly dispersed around the bottom of the crust.

Putting it all together:

In a large bowl, add the eggs, milk, and seasonings. Whisk to blend then pour the mixture over the toppings in the crust.

Bake it:

Top with scallions and cheese and bake for 40 minutes until done.
