I had the chance to connect with Heather, owner of Flour Craft Bakery, up in San Anselmo, CA. Flour Craft is a dedicated gluten free bakery and cafe. Heather has been gluten free for the past fifteen years, way before there were any decent gluten free products on the market. She baked everything from scratch and did a lot of experimenting in the kitchen.
Heather changed careers and decided to attend culinary school. It was a difficult decision because she was gluten free and had to be very careful around the flours. This risk was worth it and she was able to refine her techniques to create delicious baked goods. Heather sold gluten free bakery items at the local farmer’s markets for a few years, but knew she really wanted to open a bakery.
She used Kickstarter to help raise the money. This was a challenging process, Heather said it took a long time for her to feel comfortable with the “fearless self promotion” it took in order to get the word out about her campaign. It took awhile to find the perfect location, but she finally found a central location that would work for her bakery. Overall, she feels like the process was worth it because it built a strong community with her customers.
Flour Craft sells five varieties of gluten free bread daily, and even brioche on the weekends. Her best sellers rotate with what is available at the farmer’s market. Right now pumpkin items are very popular for Thanksgiving. You can custom order pies and cakes for the holidays, birthdays, and any other special event.
