School is back in session in September, and along with school comes those busy nights. The thing I love most about this baked chicken and rice is that you can make it in one pan. This dish is quick to make and even easier to clean up because you only have to clean one thing!
(Not to mention my kids LOVED the blackberry flavors that seeped into the chicken.)

This recipe uses only 6 healthy ingredients. Chicken, rice, butter, jam, tarragon, and chicken broth. These simple ingredients make the best one-pan chicken and rice dish.
It doesn’t get any easier than this baked chicken and vegetable dish!!
(At the last minute, I decided not to use the cheddar cheese, but you can see all of the other delicious ingredients I used from Smart & Final. They are a one-stop shop for everything I need.)

- Spray the pan with olive oil and add the rice.
- Next, add the chicken.
- Spread the blackberry jam on top of the chicken.
- Add broth and tarragon and bake.

How to make a one-pan chicken dinner:
- 1 package chicken legs, There were 4 large legs and attached thighs in my package
- 2 cups white rice
- 16 ounces chicken broth
- 1 teaspoon salt
- 2 cups water
- 1 cup blackberry jam
- 1 package fresh tarragon
- 3 tablespoons butter
- Preheat the oven to 375 degrees.
- Add rice to a 8x11 baking dish. Spray the dish with olive oil.
- Pour dry rice on the bottom of the pan.
- Add chicken on top of the rice.
- Spread the blackberry jam onto the chicken.
- Sprinkle the salt on top. Add the fresh tarragon.
- Pour in the broth and water.
- Bake for 45 minutes or until chicken is 165 degrees. (Check the chicken after 30 minutes. You may need to add more water to the rice.)
- Remove from the oven and serve hot.
