If you love pasta, but not all the carbs, this crab, sun-dried tomato, shiitake, and zucchini zoodle pasta dish is a delicious combination of flavors.
This recipe is dedicated to all of those people who have done the “blank” stare into the refrigerator, or pantry, wondering what on earth you are going to make for dinner.

This has happened one too many times for me lately. Work has been busy, I am traveling a bit for my daughter’s volleyball tournaments, and live is just really busy right now.
Staring into my refrigerator, I had two zucchini, a jar of sun-dried tomatoes in olive oil, some fresh shiitake, leeks, and a can of crab meat. Sounds exciting, doesn’t it?
Today I let creativity reign and I hope you like this odd sounding dish as much as we did :-).
The hero of my recipe is my zoodle maker. It holds up to everything I put in and I always get the nicest curly vegetables.
This dish is low-carb and is so quick and easy. Just 20 minutes. Perfect for a busy night!

How to make zoodle pasta:
Easy crab, sun-dried tomato, shiitake, and zucchini zoodle pasta
- 1 large or 2 small zucchini zoodled
- 2 cans crab meat drained
- 2 tablespoons sun-dried tomatoes packed in olive oil
- 1 leek sliced
- 6-8 fresh shiitake mushrooms sliced
- 1 tablespoon fresh basil chopped
- 2 cloves garlic minced
- 1/2 teaspoon salt
- pepper to taste
- Optional parmesan cheese
- In a large cast iron skillet, add sun-dried tomatoes in olive oil.
- (This is the main amount of olive oil in this recipe.)
- Saute for 2 minutes then add garlic.
- Add leeks and mushrooms.
- Saute 5 minutes.
- Add zucchini zoodles and crabmeat.
- Cook until zucchini softens.
- Optional, top with parmesan cheese.
