The men in my family love to start their day with a hot bowl of warm oatmeal. They eat it the same way, each and every morning. Cooked with milk and syrup. They tend to toss in some nuts, usually walnuts.

I decided to spice things up and see what type of reaction I could get from the guys this morning. I used a 50-50 water and coconut milk ratio for my liquid and used coconut sugar to sweeten. I grabbed some cardamom, one of those spices that is most often in the far back of my spice cabinet.
My new goal is to start using more of those spices that get overlooked. There are so many spices I have bought for a specific recipe, then never used it again. Star anise? Chines Five Spice? I am going to find ways to use those soon!

How to make gluten free oatmeal:
- 2 cups whole oats
- 2 cups coconut milk
- 2 cups water
- 1/4 cup coconut sugar
- 1 teaspoon cardamom
- In a covered saucepan, bring the water and coconut milk to a boil.
- Add coconut sugar, vanilla, cardamom, salt, and oatmeal.
- Reduce heat and simmer until the extra liquid is absorbed, about 15 minutes.
