Curry Sweet Potato Waffles

Sweet potato waffles make a fun and delicious and easy breakfast recipe. Waffles are all the craze right now and this easy hash brown waffle recipe is crazy good! Make this sweet potato waffles recipe on a waffle iron and serve with sour cream, or add a fried egg on top!

Have you ever eaten savory waffles? I am all about waffles, and so are my kids. We have had lots of sweet waffles because...well, just because :-).

Did you know you can make delicious things with a basic waffle iron? I had no idea how much fun you could have!! This easy sweet potato hash brown recipe is going to be hard to resist!

I haven't tried making anything savory in my waffle iron because I wasn't sure how these would go over. You know how kids can be! I decided to keep it safe and use sweet potatoes.

Why these sweet potato waffles are great:

Not only is this sweet potato waffle recipe easy to make, but it is full of flavor. You can use them as a breakfast or make them mini, and they make a great appetizer! I love you can use the waffle iron for quick and easy cooking.

This easy hash brown waffle recipe is Whole30 compliant, paleo, vegan, and dairy-free too! If you love potatoes as much as we do, check out all of my delicious gluten free breakfast recipes.

Ingredient notes:

  • Sweet potatoes - You can use any type of sweet potato or yam. You can even use Hawaiian purple sweet potatoes!
  • Curry and turmeric - You can go lightly or heavily in how much you use. Kids tend to like less turmeric.

Recipe step-by-step directions:

Step 1: Grate your sweet potatoes. I use a food processor to grate my sweet potatoes. You can also use this mandolin slicer. Make sure to dry the shredded sweet potatoes with a paper towel to absorb some moisture. This will help your sweet potato waffles hold together better.

It is really easy to shred a sweet potato! Just wash your potato, chop off the pointy end, and rub the sweet potato across the surface of the grater! For this recipe, you will grate 2 large sweet potatoes.

Step 2: Use a paper towel to squeeze out the extra moisture. Add in the spices and mix well. This step is important because the moisture can make your sweet potato waffles soggy.

Step 3: Spray olive oil onto the waffle iron to get a crispy finish to these waffles. You can use coconut oil or olive oil. Add the mixture to the hot waffle iron and close the lid to cook. The hash browns cook so quickly! So easy!

Stovetop directions:

You can also fry the sweet potato hash in an oiled pan!! If you don't have a waffle maker, no worries! You can make more of a latke-style pancake with this shredded sweet potato mixture if you don't have a waffle iron. The delicious flavor would be the same, even the crispy edges!

Ingredients
  

  • 2 large sweet potatoes grated
  • 2 tablespoons olive oil
  • 1 teaspoon curry
  • 1 teaspoon turmeric
  • salt/pepper to taste
  • Optional: sour cream and chives

Instructions
 

  • Preheat a waffle iron.
  • Pat grated sweet potatoes down with a paper towel to remove excess moisture.
  • In a large bowl, combine sweet potato, oil, and spices.
  • Mix well.
  • Spray olive oil onto both sides of the waffle iron.
  • Add ¼ cup of sweet potato mixture to the hot waffle iron.
  • Close the lid and cook for 5-8 minutes.
  • Lift the lid at 5 minutes to see if it is crispy yet.
  • Cook longer if it isn't.
  • Repeat with the rest of the mixture.
  • Be careful when you lift it out of the waffle iron so it doesn't fall apart.
  • Serve warm.

Notes

  2. These waffles will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

    These look so amazing! I haven't ever had savory waffles, but I have been wanting to try to make cornbread waffles! I never think to get creative with waffles and I really need to start! Thank you for sharing!

    Our waffle iron had to e put in retirement but I want to get a new one just to make this delicious curried sweet potato has brown waffles. I have not had savory waffles before either, but why not! Sharing everywhere!
