These delicious, thick grilled pork chops with a homemade blackberry thyme sauce are a deliciously easy dinner that the whole family will love.

- Pork chops - you can use bone-in or boneless pork chops
- Blackberries - I also love to use olallieberries, but they have a very short season, so blackberries are also a great choice to make the sauce.
- Thyme - I use fresh thyme to season the berry sauce.

Recipe step-by-step directions:
Preheat your grill to 400º F.
Step 1: Brush your pork chops with light cooking oil and season your pork chops on a plate with salt and pepper.
Step 2: When your grill is hot, add the raw pork chops. Cook the pork chops over direct heat. I make sure to flip the pork chops after the first 8 minutes.
Pork chop grill time depends on how thick your pork chops are. You want to grill them until they have an internal temperature of 145-165º F. Note if your pork chops are boneless, they will take less time to cook.
(The USDA changed their recommendation for cooking pork to 145º F, but many people like their pork more well done, so I give you a range.)
Step 3: Time to make the blackberry sauce (or olallieberry if you can find them!) Wash your berries and place them in a saucepan.
Step 4: Add the thyme, lemon juice, water, sugar, and simmer on low heat for 10 minutes. Whisk in the cornstarch and cook until the sauce is reduced and thick.

I am sure you have seen pork ads discussing how it is the healthy "other white meat." Pork is, in fact, packed with nutrition. This doesn't mean bacon, though I am sorry because bacon is one of my favorite foods; lean pork including pork chops and pork tenderloin can be good for you and your heart.
It would be best if you never served pork rare, but it is perfectly safe to have a little bit of pink inside.
Pork chops turn out tough when they are overcooked. They are easy to overcook so be sure to keep an eye on the internal temperature when cooking them.
I always season pork chops 15-30 minutes before cooking.
Store the cooked pork chops in an air-tight container in your refrigerator. They should keep fresh for up to 4 days.

Grilled Pork Chops with Olallieberry Thyme Sauce

- 4 pork chops
- ½ teaspoon pink Himalayan salt
- ¼ teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 pint blackberries *see note
- ¼ cup water
- 1 teaspoon lemon juice
- 1 tablespoon sugar
- 1 teaspoon fresh thyme
- 1 tablespoon cornstarch * see note
- Preheat the grill to º F.
- Rub pork chops with salt, pepper, and olive oil. Let rest 15 minutes.
- Place the pork chops on the grill and grill both sides until the internal temperature reaches 145 to 165º F. Remove and allow to rest 5 minutes before serving.
For the sauce:
- Put the olallieberries, water, thyme, sugar, and lemon juice in a pan.
- Bring to boil on medium heat
- Reduce heat and simmer for 15-20 minutes until sauce thickens.
- Add cornstarch and mix well.
- Top the pork chops with the blackberry thyme sauce.
- Use bone-in or boneless pork chops. Note that your cook time will vary depending on size and thickness of your pork chops.
- Grill your pork chops until they have an internal temperature of 145-165 degrees.
- I love olallieberries for the sauce recipe, but they have such a short season I recommend using blackberries.
- You can use dried thyme, but cut the amount in half.
- The cooked pork chops will keep in the refrigerator up to 4 days.
