The holidays are here and it is time to start thinking about entertaining and fun party food appetizers. Appetizers are a must for both adults and hungry kids.

One of the easiest (and quickest) appetizers to make is stuffed endive leaves. I was lucky enough to get three heads of endive and fresh kumquats in our organic farm box today.  Have you tried kumquat yet? You can eat these tiny oranges whole, peel and all! Believe it or not, you can even eat the kumquat seeds!

My kids thought that was odd at first, but they quickly caught on.

Kumquats are versatile in so many recipes, both sweet and savory. This kumquat appetizer recipe is fun, and the bright orange color makes this cheese stuffed endive  look pretty on a buffet.

Your guests will love this healthy endive appetizer recipe. It is stuffed with fresh goat cheese, kumquat, pistachio and honey.

My favorite thing about this appetizer is that it can be made in about 5 minutes so you can focus on more important things, like socializing with your friends.

Endive with Goat Cheese, Kumquats, Pistachios, and Honey Drizzle

Ingredients
  • 2 heads of endive
  • 4 ounces goat cheese
  • 10 kumquats sliced and seeds removed
  • 1/4 cup chopped roasted and salted pistachios
  • 2 tablespoons fresh honey
Instructions
  1. Slice the base of the endive off and peel the leaves carefully off.
  2. Arrange leaves with the U shape facing upwards.
  3. Put a teaspoon of goat cheese in each one.
  4. Add kumquat slices and pistachios.
  5. Drizzle honey over the top.
