I was lucky enough to get three heads of endive and fresh kumquats in our organic farm box today.  Have you tried kumquat yet? You can eat these tiny oranges whole, peel and all! Believe it or not, you can even eat the kumquat seeds!

My kids thought that was odd at first, but they quickly caught on.

Easy goat cheese kumquat stuffed endive appetizer.

  • 2 heads of endive
  • 4 ounces goat cheese
  • 10 kumquats sliced and seeds removed
  • 1/4 cup chopped roasted and salted pistachios
  • 2 tablespoons fresh honey
  1. Slice the base of the endive off and peel the leaves carefully off.
  2. Arrange leaves with the U shape facing upwards.
  3. Put a teaspoon of goat cheese in each one.
  4. Add kumquat slices and pistachios.
  5. Drizzle honey over the top.
