How to make this stuffed endive appetizer:
- 2 heads of endive
- 4 ounces goat cheese
- 10 kumquats, sliced and seeds removed
- 1/4 cup chopped roasted and salted pistachios
- 2 tablespoons fresh honey
- Slice the base of the endive off and peel the leaves carefully off.
- Arrange leaves with the U shape facing upwards.
- Put a teaspoon of goat cheese in each one.
- Add kumquat slices and pistachios.
- Drizzle honey over the top.
