How to make this stuffed endive appetizer:
Easy goat cheese kumquat stuffed endive appetizer.
- 2 heads of endive
- 4 ounces goat cheese
- 10 kumquats sliced and seeds removed
- 1/4 cup chopped roasted and salted pistachios
- 2 tablespoons fresh honey
Slice the base of the endive off and peel the leaves carefully off.
Arrange leaves with the U shape facing upwards.
Put a teaspoon of goat cheese in each one.
Add kumquat slices and pistachios.
Drizzle honey over the top.
