If you have been reading about our edible cookie dough adventures, you knew I couldn’t just sit with vats of edible gluten free cookie dough in our house for too long! I decided to put on my creative hat and came up with an easy gluten free dessert recipe that my kids called “stellar”!
I originally wrote this post for my friend Linda over at The Gluten-Free Homemaker’s site. She has a crazy summer planned, so I am helping to keep her readers with a sweet tooth happy. I am so excited that I can share it with all of you too! 🙂
I have been enjoying this summer quite a bit. I have been enlisting our kids’ friends to help share calories…it gives us a break, at least that is what we are telling ourselves! The kids pretty much devoured this delicious ice cream cake.

Once you make a batch (or two!) of this cookie dough, you need to make your favorite flavor of no-churn ice cream to fill the pie with! I am sharing my classic vanilla ice cream recipe with you.
What mixins do you like?
Here are a few ideas:
- Gluten free cookies that are broken up.
- Add chunks of extra cookie dough that you have from the crust.
- Fresh raspberries. These would be amazing with the chocolate and vanilla flavors.
- Broken candy bars. I love to add Butterfinger to my ice cream!
- Chocolate or any flavor chips.
