It is finally summer. School is just about done and it is finally time for everyone in our family to pause and take a breath.
Sleep in (well, at least the kids can do this!)
And have a big pool party!

I feel like it was only yesterday we were getting used to having a child in high school for the first time. Now we just need to survive their first ever finals week, and then we’re done for a few months.
What better way to celebrate than a pool party? The kids can invite their friends and cut loose.
We are going to set up a “Pop Bar” style toppings bar. Pop Bar is a new fun concept shop here in the Bay Area. You go in, pick your pop and top it any way you like. I am going to recreate this fun concept with a lot of tasty flavor options so the kids can enjoy their popsicles any way they want.

Outshine is sort of our frozen hero of summer. We go through a LOT of popsicles during the summer. The kids love them, and we feel good giving these to the kids.
I love Outshine because they are full of good ingredients…AND they are gluten free, which is critical for our family. These bars are full of fruit juice. When you bite into these bars, the first thing you taste are the bright flavors of real fruit, real juice, real veggies and real yogurt. In fact, there’s now, even more, fruit or fruit juice in most of their fruit bars than any other ingredient. It’s part of Outshine’s goal to give you bars where the best ingredients come first.
The fruit and veggie bars are so good, you can’t even tell there are vegetables in there! Outshine should hide that word so kids don’t see it.
Even my savvy kids couldn’t tell there was pumpkin, cauliflower, sweet potato, or beet juice in these bars. (Hooray for stealthy goodness!) No GMOs, artificial flavors, no high fructose corn syrup, and they are also fat-free.
Mr. Fearless Dining is compelled to sneak in a few words here – “but not as stealthily as you could sneak some veggies into your kids’ (and spouses’) frozen treats with these bars! These Fruit & Veggie Bars are really good! Even our pickiest eater likes them. Learn from our mistake: we let slip that they contain veggies, so we had to work hard to persuade her to try. What helped us is that the bars are not green and full of specks of spinach and kale and other danger signs that will warn your children about your devious trick! So give these a try – you’ll be glad you did! If your little ones can read, cover up the “V” word on the box. Otherwise you’re going to have to either eat a lot of bars yourself, or you’ll have to threaten/bribe/cajole the educated little ones to try the bars for themselves.” – Mr. FD.
Our local Walmart in San Jose has a gigantic assortment of Outshine flavors to choose from! From the top of the case to the bottom, all Outshine flavors. (Just look for the big Ice Cream sign in the freezer section at Walmart…these bars are so easy to find.) I bought the Fruit & Veggie and the Peach Yogurt flavors for our toppings bar.
Our first step to making the toppings bar was to melt dark chocolate. Grab lots of delicious toppings. We love using freeze dried fruits like strawberries and bananas. They add a crunchy fruity sweetness to these pops. You can also include nuts, sprinkles, and mini chocolate chips!
What would you top your Outshine bar with?
- 1-2 boxes of Outshine frozen popsicles or yogurt bars
- melted dark chocolate
- chopped nuts
- Freeze-dried strawberries, bananas, or any fruit you like
- Melt chocolate in the microwave.
- Drizzle or dunk popsicles into the chocolate.
- Sprinkle on your favorite toppings!
- Hint- the chocolate cools really quickly so sprinkle the toppings quickly!
