We are still working our way through the giant bag of macadamia nuts that we bought at the Costco in Kauai a few weeks ago.Β  Although our trip was cut a little short by the storms, we had a wonderful time relaxing on the beaches. Both of our kids tried snorkling this trip.

If you get a chance to visit this island, don’t forget to visit Sweet Maries’s Gluten Free Bakery. This cute little dedicated gluten free bakery is only a 5 minute drive from the Kauai airport. I will be writing an article about Sweet Marie’s in the next few days.

I have been having a lot of fun with these nuts. They have a delicate nutty flavor that is very different from the walnuts or almonds I typically use in my baking. This cookie is crispy and holds up well to a glass of cold almond (or regular) milk.

Although you can use milk chocolate in this recipe, I highly recommend using dark or semi sweet chocolate chips. This rich chocolatey flavor really works well with the macadamia nuts!

Gluten Free Chocolate Macadamia Cookies
  • 1 1/4 cups Authentic Foods Multi Blend Flour
  • 3/4 cup almond flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup coconut sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 3/4 cup butter melted
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped macadamia nuts
  1. Preheat the oven to 350 degrees.
  2. Spray baking sheet with coconut oil.
  3. In a large bowl, add all dry ingredients. Whisk to blend.
  4. In a medium bowl, add all wet ingredients. Blend well then add chocolate chips and nuts.
  5. Pour wet ingredients into dry ingredients.
  6. Mix well.
  7. Use a cookie scoop or spoon to drop cookie dough onto baking sheet.
  8. Bake 8-10 minutes until done.

    • Thank you Mira πŸ™‚ What is the flour ratio you used? Usually if they spread out too much you have too much liquid. I would be happy to look at the recipe you used and offer suggestions.

  11. Are the macadamia nuts sold at Costco certified gluten free? I have a very hard time finding nuts that have not been processed in the same facility as gluten containing ingredients. Thank you

    • The ones sold at the Hawaii Costo are from a Hamakua Nut Company. There is no mention of shared facilities on their package. I went to their website and sent them a note to find out. I will keep you posted.
