We are still working our way through the giant bag of macadamia nuts that we bought at the Costco in Kauai a few weeks ago. Although our trip was cut a little short by the storms, we had a wonderful time relaxing on the beaches. Both of our kids tried snorkling this trip.

I have been having a lot of fun with these nuts. They have a delicate nutty flavor that is very different from the walnuts or almonds I typically use in my baking. This cookie is crispy and holds up well to a glass of cold almond (or regular) milk.
Although you can use milk chocolate chips and even white chocolate chips in this recipe, I highly recommend using darsemi-sweetsweet chocolate chips. This rich chocolatey flavor really works well with the macadamia nuts!
- 1 1/4 cups Authentic Foods Multi Blend Flour
- 3/4 cup almond flour
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup coconut sugar
- 1 teaspoon vanilla
- 2 large eggs
- 3/4 cup butter, melted
- 1/2 cup dark chocolate chips
- 1/2 cup chopped macadamia nuts
- Preheat the oven to 350 degrees.
- Spray baking sheet with coconut oil.
- In a large bowl, add all dry ingredients. Whisk to blend.
- In a medium bowl, add all wet ingredients. Blend well then add chocolate chips and nuts.
- Pour wet ingredients into dry ingredients.
- Mix well.
- Use a cookie scoop or spoon to drop cookie dough onto baking sheet.
- Bake 8-10 minutes until done.
