My husband loves to make breakfast with the kids on the weekends. For years it has been their special time. Now that our kids are teens, that time together is less and less. The kids are much more likely to sleep in than get up and make breakfast with dad.
Today, Mr. Fearless Dining is trying to replicate a recipe both he and my son both love. My son is a Boy Scout. When my husband was a scout, he remembers making a peach cobbler on a camping trip. They would layer biscuit with peaches in the Dutch oven and set it on top of the coals.

Do you peel peaches before baking?
I do not peel peaches before using them in my recipes. The skin is very soft and softens even more while baking.
Can you use frozen peaches?
You can easily use frozen peaches but I recommend thawing your peaches before using them.
Can you use canned peaches?
I am torn on using canned peaches. Most are full of sweet syrup, which can make your crisp too sweet. If you use canned peaches you may consider buying the least syrupy brand you can find. You can also rinse the peaches in a colander to remove the syrup.

How long do you bake cobbler for?
For this cobbler recipe, you will bake it for 20-25 minutes at 350 degrees F. I know summer can be hot so feel free to bake this in a toaster oven, or small convection oven.
Can you freeze this recipe?
You can definitely freeze this peach cobbler recipe. You will want to wrap the top of the dish in plastic wrap, then a layer of foil to prevent freezer burn.
To defrost the cobbler, remove the plastic wrap. Replace the foil over the cobbler and bake at 300 degrees for 15-20 minutes until warm.
Can you make a fruit crisp out of this recipe?
You most definitely can make this a peach crisp instead. Use the crumble topping in my Gluten Free Apricot Crisp recipe instead of the biscuit topping.
Can you make this recipe nut-free?
You can easily make this cobbler nut-free by omiting the almond slices and using a different non-dairy milk like rice milk.
Can you make this recipe dairy-free?
This gluten free cobbler recipe is easy to make dairy-free. All you need to do is substitute coconut oil for the butter. You can also use a vegan butter substitute.

- For Fruit Base:
- 6-8 fresh peaches
- 1/2 cup brown sugar
- 1 tablespoons melted butter
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
- For Crust Topping:
- 1 1/4 cup gluten free flour blend, (*Note, my flour blend has xanthan gum included. If yours doesn't, add 1 teaspoon.)
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 egg
- 4 tablespoons melted butter
- 3/4 cup almond milk
- 1/4 cup optional sliced almonds
- Preheat the oven to 350 degrees.
- In a large bowl, add cobbler ingredients and whisk to blend.
- Slice peaches in to slivers and add to a medium sized bowl.
- Add the other fruit base ingredients to the peaches and toss to mix.
- Spray coconut oil (or other light oil) in a baking dish.
- Add peaches to the baking dish.
- Sprinkle almonds on top.
- Spoon cobbler mixture on top of the peaches.
- Bake for 20-25 minutes until done.
- Serve with whipped cream or ice cream.
You can use fresh or frozen peaches in this recipe. Just thaw the frozen peaches before using them. If you use canned peaches, you will want to buy the least syrupy brand you can find and drain the peaches. If you don't like your cobbler too sweet, you may consider rinsing canned peaches in a colander.
