    I am on a Madeleine kick lately...and these dairy-free matcha green tea Madeleines are no exception. Not only do these tiny French cakes have a wonderful flavor, but they pack a tiny caffeine kick as well :-).

    The fun twist to this madeleine recipe is the matcha green tea powder...it adds a uniquely delicious flavor you will easily fall in love with!

    These delicious gluten free cookies are perfect with tea or coffee... or anytime you need a sweet pick-me-up treat.

    Is this Madeleine recipe dairy-free?

    For this Madeleine recipe, I decided to make it dairy-free by using coconut oil and coconut cream instead of butter. These Madeleines are delicate and cake-like, so the experiment went well 🙂

    (*Note: not all matcha green tea powders are gluten free. Check ingredients!!)

    What is matcha?

    Matcha is a green tea powder that comes in culinary or ceremonial grades. There are many different quality grades in between! I love to bake with matcha and typically use the culinary grade. ookies.

    You can use matcha green tea in all sorts of recipes, including baked desserts like donuts, cakes, mochi, puddings, and even mixed drinks!

    This is one of my favorite gluten-free flour blends for cookies, cakes, pie crust, biscuits, and muffins! (Do not use this flour blend for yeast recipes.)

    Instructions:

    Adding matcha green tea powder to the dry ingredients.

    Pour the dry ingredients into a bowl and add the matcha green tea powder.

    I tested this recipe using Bob's Red Mill 1 to 1 Gluten Free Flour Blend and King Arthur's Measure for Measure Gluten Free Blend. That doesn't mean others will not work; I just have not tested other flours.

    Adding wet ingredients to the bowl.

    Add the wet ingredients to a bowl and mix well.

    Pouring wet ingredients into the dry ingredients.

    Pour the wet ingredients into the dry ingredients.

    Mix the batter. Add to a Madeleine pan, or you can make cupcakes! Bake your Madeleines and bake at 350º F for 8-10 minutes.

    What flavors go well with matcha?

    My favorite flavor profile with matcha is white chocolate, as you will see when I use matcha green tea and white chocolate. Other flavors that pair with matcha include vanilla, almond, and coconut.

    Ingredients
      

    • 1 tablespoon + 1 teaspoon matcha green tea powder
    • ¾ cup gluten free flour blend * see note
    • ½ cup almond flour * see note
    • ½ cup sugar
    • ½ cup coconut oil melted
    • 3 large eggs
    • 1 teaspoon pure vanilla extract
    • ⅛ teaspoon salt
    • ½ teaspoon baking soda
    • ¼ cup coconut cream

    Instructions
     

    • Preheat oven to 350º F.
    • Spray coconut oil on Madeleine pan to prevent sticking.
    • In a large bowl, add dry ingredients and whisk to blend.
    • In a small bowl, add wet ingredients and mix well.
    • Pour wet ingredients into dry ingredients and mix.
    • Put a spoonful of dough into each Madeleine pan cake mold.
    • Bake for 10 minutes until done.
    • Optional, drizzle icing on top.

    Notes

    1. I have tested this recipe with King Arthur Measure for Measure GF and Bob's Red Mill 1 to 1 GF blend. That doesn't mean others will not work, I just have not tested other flours.
    2. If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1 teaspoon.
    3. I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your Madeleines grainy.
    4. These cookies will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

    SPECIAL NOTE

    Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
