When it is hot outside, these desserts are an awesome way to get your sweet fix without using an oven.
This no-bake gluten free, dairy free chocolaty brownie bites are the perfect treat for after school. I guess you could call these raw brownies since no cooking is needed!
I made these cookies today then set them out on the counter just before my kids got home from school. I was eager to get some opinions on this new no-bake treat.
Once I explained there was no egg or dairy in these cookies, and that they were safe to eat, he dove right in. He thinks they are more like fudge than a cookie:-).
- Gluten free graham cracker crumbs
- Almond flour
- Cocoa powder
- Almond milk
- Chopped nuts
- Shredded coconut, unsweetened
In a large bowl, add your dry ingredients and the shredded coconut and whisk to blend. In a smaller bowl, add the wet ingredients and mix well.
Pour the wet ingredients into the dry ingredients and mix.
Use a cookie scoop to drop cookie dough balls onto a wax paper lined 9x13 pan. Refrigerate until they are solid, about 30-45 minutes.
You will also find these raw brownie bites are much healthier than typical brownies. I added lots of almond flour and chopped nuts to pack these cookies full of protein. Promise me you won't tell my kids that. They may stop eating them!

- 1 cup almond flour
