Peaches are in season and what better way to enjoy them than in gluten free overnight oats? This overnight oatmeal recipe tastes just like peach cobbler, lots of brown sugar goodness combined with fresh juicy peaches.
We are still in a mini heat wave in the Bay Area and I am really trying to avoid using my stove and oven right now.
Our family doesn’t eat a lot of cold cereal, so I have been playing with different overnight gluten free oats for breakfast. So far, this peach cobbler overnight oat recipe is a winner as both of my kids couldn’t get enough.
This recipe is super easy….put everything in tupperware, mix it up, toss it into your refrigerator, and let it sit overnight. Ingredients are easy to pull together. (If you don’t have a vanilla bean, just substitute 1 teaspoon vanilla extract.)
What makes this recipe so easy is my Cuisinart Smart Stick. If I could be in love with any kitchen gadget, this is it. It is an immersion blender, mixer, and chopper. It saves me time and is really easy to clean up. I used it in this recipe to turn my over ripe peaches into a slurry.
I left the peach skins on since the Cuisinart pureed it so thoroughly.

- 1 cup gluten free rolled oats, not quick cook
- 1 tablespoon chia seeds
- 1 cup almond or coconut milk
- 1/2 teaspoon vanilla bean, or 1 teaspoon vanilla
- 1 large peach, pureed
- 1 tablespoon and 1 teaspoon honey
- 2 tablespoons brown sugar
- In a resealable container, add all ingredients.
- Mix well.
- Place in the refrigerator and allow to sit overnight.
- Serve in the morning with sliced peaches on top.
