    Not only do you get creamy peanut butter flavor from the pie filling, but the crust is made with peanut butter sandwich crackers so you get a sweet taste with a hint of salt. You are going to love this no-bake peanut butter pie recipe! (I also include both nut-free and dairy-free options below.)

    I am back to discuss my family's favorite gluten free crackers. If you remember, last week, I showed you how to make a quiche recipe that even picky eaters like mine will love. The secret was the Lance Gluten Free Cheese Crackers.

    Last night, I used one of the most popular things in our house to make mini pies. Peanut butter! If your family eats their peanut butter out of the jar, then they are going to love this fun, no-bake peanut butter pie.

    When I brought these peanut butter sandwich crackers home a few months ago, my son ate a whole box alone. (Okay, he is a growing teen, but wow!) This is a testament to these crackers. Lance Snacks uses real peanut butter and no artificial ingredients, high fructose corn syrup, or hydrogenated oils in their crackers. You CAN taste the difference!

    What I love about this peanut butter pie is that you don't have to cook it. This pie is set in your refrigerator or freezer, depending on how cold you want your pie.

    No-bake pies are really popular in the summertime because you don't have to turn on your oven. Even though this recipe is excellent in the summer, this peanut butter pie no-bake recipe is entertaining all year round.

    Instructions:

    The peanut butter sandwich crackers in a food processor.

    Let's make the crust first. Add your peanut butter crackers and butter to a food processor.

    Your crust will be ground to medium-fine, like in this photo.

    Add your crust to these cute little round tart pans. You can also use a large rectangular tart pan if you prefer.

    Baking Hint:

    Make sure your tart pan has a removable bottom so it is easier to get the tart out of the pan.

    Using a spoon to press down the crust in each pan.

    Using a mixer to mix cream cheese.

    Whip the room-temperature cream cheese with the cream and vanilla with an electric mixer.

    Mixing in the peanut butter.

    Mix in the peanut butter.

    Mixing in the powdered sugar.

    Lastly, add the powdered sugar a little at a time and mix in.

    Pouring the peanut butter mixture over the crust.

    Pour the peanut butter mixture over each crust. Top with chocolate chips and chill for 2 hours in the refrigerator. Enjoy!

    Can you make these dairy-free?

    You can easily make this peanut butter pie recipe dairy-free by substituting dairy-free cream cheese.

    Can I use a different crust?

    You can definitely use a different crust; Lance makes a plain gluten-free cracker that would be amazing in the crust. If you can't find it, graham crackers work really well, too.

    Is it possible to make this butter pie nut-free?

    You can make this peanut butter pie recipe nut-free using graham crackers for the crust and SunButter instead of peanut butter.

    Ingredients
      

    • ¾ cup peanut butter room temperature
    • 8 ounces cream cheese room temperature
    • 1 cup powdered sugar
    • 1 teaspoon pure vanilla extract
    • 14 ounces coconut cream
    • 2 cups Lance gluten free peanut butter sandwich crackers crust
    • 3 tablespoons unsalted butter, melted crust
    • 1 tablespoon maple syrup crust

    Instructions
     

    • Put the crackers in a bag or food processor to grind up.
    • Add peanut butter, cream cheese, vanilla and coconut cream to a large bowl. 
    • Whip with an electric mixer to blend.
    • Add powdered sugar and whip together. Set aside.
    • Pour crushed crackers and maple syrup in a bowl and mix.
    • Add crust mixture to a pie pan (or mini pans). Press the crust along the inside of the pan.
    • Pour in the peanut butter pie filling. Add optional chocolate chips.
    • Refrigerate or freeze for 3 hours.

    Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.

      Love these crackers- my gluten loving hubby even shares them. I like to carry these when we travel, especially by air. I have a snack I can enjoy when the flight attendants pass out cookies or crackers. Planning to try this recipe, but I don't care for maple so I might substitute agave.
