Are your kids pizza fanatics? Mine are, and we usually make gluten free pizza once a week! Last Sunday, we decided to have fun and make a rolled pizza version that rolls like cinnamon rolls.

I am really excited about this recipe, and I can’t wait to hear what toppings you roll into these! They make a fun dinner the whole family will love.

  • I used Cup4Cup for this recipe because it makes biscuits and bread more fluffy. I also tested this recipe using Bob’s Red Mill 1 to 1 Gluten Free Flour Blend. That doesn’t mean others will not work; I just have not tested other flours and I can not guarantee the recipe will work if you use other mixes. I thought the Cup4Cup was significantly better than the Bob’s in yeast rise, etc.
  • Xanthan gum – If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1 teaspoon.
  • DIY Flour Blend – You can use my new gum-free flour blend in this recipe instead of a store-bought blend. You will need to add 3-4 TBSP of additional water and 2 teaspoons of psyllium husk powder.
  • Yeast – double that the brand you use is gluten-free. Red Star Platinum is NOT gluten free!
  • Pizza sauce – You can use store-bought or make my homemade gluten free pizza sauce recipe.

Recipe Step-By-Step Directions:

Step 1: Add the 105º F water, oil, sugar, and yeast to a bowl. Stir and let it sit for 5 minutes until the yeast is bubbly. Add the rest of the wet ingredients and whisk to blend.

Step 2: Add 3 cups of the flour and salt to a bowl and whisk to blend it. Pour the wet ingredients into the dry ingredients.

Step 3: Cover the bowl with plastic wrap or a clean towel and allow it to rise for 1 hour.

NOTE: I like my dough a little wetter for the rise. I feel it gets more rise.

Step 4: Mix the remaining ½ cup of gluten-free flour into a dough. Let it sit for 10 minutes.

Note: all gluten free flour blends are different, and you may need some extra flour or water to make your dough the right consistency. Starchy blends may need more water, while other blends may not need as much.

Step 5: Dust a piece of parchment paper or the counter with gluten free flour. This will prevent it from sticking when you try to roll the dough. Place the dough onto the paper.

HINT: Feel free to dust the dough with as much gluten free flour as you need to roll or press the dough flat.

Step 6: Use a rolling pin or your hands to flatten the dough to ⅓ to ½ inch thickness. Try to make it into a rectangular shape.

Step 7: Spread your pizza sauce over the crust. You can use my homemade pizza sauce linked in the ingredient notes, or make it fun with my easy gluten free alfredo sauce or nut-free pesto sauce recipes!

Step 8: Add your toppings!

Step 9: Carefully roll your dough lengthwise to make a big roll. If your dough sticks a little (as you can see mine did), dust the roll next to the paper with a little flour.

Step 10: Use a string to cut the rolls, like cutting cinnamon rolls. Lay a piece of thread under a portion of the big roll and pull the two ends of the string together to cut the dough.

Step 11: Place the rolls onto a baking sheet. Bake at 400º F for 15-20 minutes. (the actual baking time will vary depending on how wide and tall your rolls are.)

Air Fryer Directions:

To make these gluten free pizza rolls in your air fryer, follow the directions up until the rolls are cut.

Preheat your air fryer to 400º F for 5 minutes. Place the pizza rolls into the basket of the air fryer. Cook for 12-15 minutes or until done. Note: The actual baking time will vary depending on the size of your rolls.

Can you freeze pizza rolls?

These pizza rolls freeze really well. I put cooled pizza rolls into a zip-style freezer bag and freeze them. To thaw, put them in the microwave for 35-45 seconds, depending on their size.

Can you make this dairy-free?

You can make this recipe dairy-free by using a different gluten free flour. I used Cup4Cup, and that does have milk powder in it. I would recommend Better Batter Artisan Blend or Pillsbury Gluten Free Flour. Use dairy-free cheese like VioLife or Daiya.

Can you cut pizza rolls with a knife or pizza wheel?

You can cut these pizza rolls with a knife or pizza wheel but note this will smooth the pizza dough together, making them look squished instead of round on the ends.

Storage:

These pepperoni rolls will keep fresh for up to 3 days in an air-tight container or for up to 4 months in the freezer.

  1. Hello. This recipe calls for salt and I must have read it 15x, but I don’t see the amount listed anywhere. I’m making it now, so can anyone help me? Lol

    1. Hi Tessa, I add about 1/4 teaspoon. I don’t like a lot of salt, so it really is to taste. I hope this helps. Note salt can hinder yeast activity so be sure not to mix them directly.
