I haven’t seen anything remotely close to those crackers in the gluten free realm until now. Lance makes delicious Gluten Free Cheddar Cheese Crackers. These crackers make the very best gluten free crust for a quiche.

I don’t know why I decided to try a quiche, but I am so glad I did. It must be the cheese crackers, but my kids devoured this gluten free quiche recipe. These gluten free crackers make the best gluten free pie crust ever.

What Is Quiche?

One of my favorite ways to describe a quiche is to think of an egg bake or an eggier soufflé. It is usually baked in a pie tin without a top crust. A quiche can be filled with any fillings, from seafood and/or meat to vegetables and cheese.

Quiche is often served for breakfast, brunch, or as a lunch with a side salad. This homemade gluten free quiche recipe is healthy and easy to make in under 40 minutes.

Why I love this gluten free quiche:

You won’t believe how easy it is to make this easy gluten-free pie crust for your quiche! There is no need to make pie crust dough when you can use these crackers! However, if you want to make a flaky pie crust, use this Gluten Free Pie Crust Recipe.

This recipe also makes a delicious gluten free quiche base. You can freeze it and use it to make quiche any time!

Although I used scallions, tomatoes, cheese, and sausage in my quiche, you can use any fillings you like. Bacon, broccoli, anything your kids will eat! The flavors all work with these cheese crackers. Then bake.

Ingredient Notes:

  • Gluten Free Crackers – I used Lance Cheese Crackers because they are so good and add flavor to this quiche recipe. You can also use Lance Plain Crackers (similar to Ritz crackers) or use my Gluten Free Cheez-Its recipe to make homemade cheese crackers.
  • Milk – Use whole, 2%, evaporated milk, or no-fat milk. You can also use dairy-free milk.
  • Cheese – Use regular shredded cheddar. If you are dairy-free, VioLife and Daiya also make good non-dairy cheese.
  • Eggs – Size large. If you have small eggs, add one extra.
  • Vegetables – Use any vegetables you like.
  • Sausage – I used Aidells chicken sausage because it is pre-cooked and gluten free. Many brands of sausage are gluten free that you can use. If you don’t use a pre-cooked brand, cook the sausage before adding it to the quiche.

Recipe Step By Step Directions:

Step 1: Put the crackers in a large zipper bag. Use a rolling pin or the bottom of a coffee mug to smush them into crumbs. You can also crush them up in a food processor.

Step 2: Add the eggs, evaporated milk, and seasonings to a bowl and use a wire whisk to blend the wet ingredients together.

Step 3: Pour your cracker crumbs into a bowl and add the melted butter and the shredded cheese. Mix well to form a sticky dough.

Step 4: Add egg and mix well to form the crust.

Step 5: Pour the crust mixture into a greased pie tin and press down to mold the crust to the tin.

Step 6: Add the sausage onto the crust.

Step 7: Add the tomatoes. Feel free to spread around the fillings so they are evenly distributed in the quiche crust.

Step 8: Pour the egg mixture over the quiche toppings.

Step 9: Add the rest of the vegetables.

Step 10: The quiche is ready to bake! Bake at 375º F for 30 minutes. You will know the quiche is done when the egg is solid, and there is a slight golden color on top of the quiche. The quiche is ready to slice and serve hot.

For this recipe, you can use almond milk, soy milk, or any other milk you can tolerate. 

Making mini gluten-free quiches is perfect for single servings and gives a fantastic presentation, too. Follow the directions to make the full-size breakfast quiche, but use a muffin tin instead of a full-sized pan.

Can you make this dairy-free?

You can make this quiche dairy-free by using dairy-free butter, milk, and cheese in this recipe. You will also need to use Lance plain flavored gluten free crackers.

How do you know when the quiche is done baking?

The easiest way to know if the quiche is done is to look at it and see if the eggs look raw. If they jiggle or move around easily when you shake it lightly, then it will need to cook for a few more minutes.

Another way to tell if the gluten free breakfast quiche is done is by inserting a toothpick in the center. If the toothpick comes out clean and free of eggs, then it is ready.

Why did my quiche turn out runny?

If your quiche turned out runny, you used too much milk and not enough eggs.

How long will this quiche keep fresh?

This quiche will keep up to 4 days in an air-tight container in the refrigerator.

Can I freeze quiche?

Yes, you can freeze this quiche recipe. Place the quiche casserole into an air-tight container and freeze. When you are ready to eat, just remove from the freezer and bake in the oven for 20-25 minutes at 350º F. Make sure it has been heated all the way through before consuming it.

Can you make this crustless?

I love making gluten free crustless quiche as well. You can certainly skip using a crust if you want to have this be low-carb. I recommend spraying the pan with a non-stick cooking spray so the crustless quiche doesn’t stick.

  • Spinach – Add extra nutrients while enhancing the flavor.
  • Onions – Grilled or fresh onions go perfectly with eggs.
  • Mushrooms – Add an amazing earthy flavor.
  • Peppers – The texture and extra flavor of the peppers are really good.
  • Ham – A very common ingredient for egg dishes, and it makes sense because it is delicious.
  • Bacon – Adding bacon makes it even heartier and adds saltiness.
  • Parmesan – When you sprinkle some parmesan on top, it is next-level good.
  • Sweet Potatoes – Adds sweetness to the mouthwateringly delicious quiche.

Ingredients
  

  • 6 eggs size large
  • ¾ cup shredded cheddar cheese
  • 5 fluid ounces evaporated milk (1 can)
  • ½ cup cooked sausage * see note
  • ¼ cup scallions
  • â…“ cup tomatoes chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon thyme

Crust

  • 3 tablespoons melted butter
  • 2 cups crushed Lance Cheese Crackers
  • 3 tablespoons gluten free flour

Instructions
 

  • Preheat the oven to 375º F.
  • In a plastic bag, add crackers and seal the bag. Use a rolling pin to crush the crackers. Put the crackers into a bowl.
  • For the crust, add melted butter, half the shredded cheese, gluten free flour and one egg to the crumbs. Mix well.
  • In a large bowl, add all liquid ingredients and the other half of the cheese. Add spices. Whisk to blend.
  • Pour crust mixture into a pie tin and spread out to cover the bottom and sides.
  • Add toppings (sausage, tomatoes, or anything you like.) Pour in egg mixture.
  • Sprinkle the remaining cheese and scallions on top.
  • Bake for 30-35 minutes until done.

  1. You can break up the crackers for this crust via a food processor or put them in a large ziplock baggie and smash them up!
  2. You could make a quiche without a crust, but why do that when you have these gluten free cheese crackers?
  3. To make this gluten free quiche gluten free, use dairy-free milk, butter, and cheese. I really like VioLife and Daiya brands of dairy-free cheese.
  4. Use a pre-cooked gluten free sausage like Aidells or Johnsonville.
  5. This quiche will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

    1. Hi K, for clarification, do you mean before or after baking? After baking, it will soften a bit, but if you reheat it in the oven vs microwave, it will crisp a bit back up.
