It would be pretty funny, but for Kaela’s birthday, I decided to do right by her so she could save face in front of her JV volleyball team. Given how much she loves cookies, I should probably make these Gluten Free Chocolate Sandwich Cookies too. They are a great Oreo substitute!

These homemade gluten free cookie recipe is quick and easy, and is perfect for a cookie exchange, bake sale, or for any occasion. You can freeze these gluten free chocolate chip cookies, so make a double batch!

Things You Need To Make This Recipe:
- My very favorite gluten free flour blend.
- A cookie scoop to ensure all of your cookies are the same size.
How to make gluten free chocolate chip cookies:
Easy gluten free chocolate chip cookies with both white and dark chocolate chips
- 2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend (*Note, my flour blend has xanthan gum included. If yours doesn't, add 1 teaspoon.)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 2 large eggs
- 1 1/2 sticks of butter melted
- 1 cup sugar
- 1/2 cup white chocolate chips
- 1/2 cup chocolate chips
Preheat the oven to 350 degrees.
In a large bowl, add all dry ingredients and whisk to blend.
In a small bowl, add all wet ingredients. Mix well.
Pour wet ingredients into dry ingredients and mix.
Spray coconut oil on a cookie sheet to prevent sticking.
Use a cookie scoop to drop cookie dough onto the cookie sheet.
Bake for 8-10 minutes until done.
Remove cookies and place onto a cooling rack.
