Easy Gluten Free White and Dark Chocolate Chip Cookies

My daughter had her birthday and she really wanted “real” (ie: don’t add healthy stuff) cookies to share with her volleyball team. I think these gluten free white and dark chocolate chip cookies were a big hit.

There, I gave these cookies a real name.

Once in awhile my kids want to have a treat like their friends…one that doesn’t have healthy ingredients. I think they are afraid of someone calling them out on the healthy thing…

Can’t you just imagine that conversation?

“Hey Kaela, is that a chia seed in my cookie? Or, Flaxseed, or did your mom use coconut sugar?”

It would be pretty funny, but for Kaela’s birthday, I decided to do right by her so she could save face in front of her JV volleyball team. Given how much she loves cookies, I should probably make these Gluten Free Chocolate Sandwich Cookies too. They are a great Oreo substitute!

So here’s to you Kaela, in lieu of a another big birthday cake, I am giving you your very favorite cookies. These homemade gluten free cookie recipe is quick and easy, and is perfect for a cookie exchange, bake sale, or for any occasion. You can freeze these gluten free chocolate chip cookies, so make a double batch!

Things You Need To Make This Recipe:

  1. My very favorite gluten free flour blend.
  2. A cookie scoop to ensure all of your cookies are the same size.

How to make gluten free chocolate chip cookies:

Gluten Free White and Dark Chocolate Chip Cookies
Course: Dessert
Cuisine: American
Ingredients
  • 2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend (*Note, my flour blend has xanthan gum included. If yours doesn't, add 1 teaspoon.)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 1/2 sticks of butter melted
  • 1 cup sugar
  • 1/2 cup white chocolate chips
  • 1/2 cup chocolate chips
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, add all dry ingredients and whisk to blend.
  3. In a small bowl, add all wet ingredients. Mix well.
  4. Pour wet ingredients into dry ingredients and mix.
  5. Spray coconut oil on a cookie sheet to prevent sticking.
  6. Use a cookie scoop to drop cookie dough onto the cookie sheet.
  7. Bake for 8-10 minutes until done.
  8. Remove cookies and place onto a cooling rack.
