When is the last time you had a grain free donut?
It has been too long for me. Today while shopping I found a big box of blueberries at the grocery store. I wanted to create something with them quickly, before my son got home from school and devoured the whole box. This gluten free blueberry donut recipe is easy to make, and it is popular with my whole family.
My son is a blueberry fanatic.
Fresh, frozen, dried, it just doesn’t matter. He will eat blueberries until his mouth is stained dark blue. I buy frozen organic blueberries in bulk at Costco every month, and he eats them all. If I want to bake with blueberries, I have to do it when he is not home, otherwise it will be too late 🙂 .
This gluten free dairy free donut recipe is loosely based on the paleo donut recipe that Fenny at Green Bites Cafe had shared with me a few months ago. I added a simple glaze on top to give these donuts a little more sweetness. A light dusting of coconut plays well with the blueberry flavor, making these donuts a favorite with my son.

*Consider using small blueberries if you are making mini donuts in the Babycakes donut cooker. Larger berries tend to take up a lot of the little donut cooking space, making it harder for the dough to get all the way around the berries.

Things You Need To Make This Recipe:
- Babycakes Donut Maker…this is my most used item for making donuts.
- If you don’t want a donut maker, this inexpensive donut pan is just as good.
Grain Free Blueberry Donuts with Coconut Glaze
- 1/2 cup coconut flour
- 1/4 cup coconut sugar
- 3 large eggs
- 1/8 teaspoon baking powder
- 3/4 teaspoon baking soda
- 2 tablespoons grapeseed oil
- 1 teaspoon vanilla
- 1/2 cup warm water
- 1/4 cup small blueberries
- 1/2 cup powdered sugar
- 1 1/2 teaspoons water
- shredded coconut I used lightly sweetened
Preheat Babycakes Mini Doughnut Maker,.
In a large bowl mix all dry ingredients.
Whisk to blend.
Add wet ingredients and stir.
Let sit for 10 minutes.
Put a spoonful in each donut cavity in the Babycakes donut cooker.
Cook for 3-5 minutes.
Open Babycakes donut cooker and use fork to remove donuts.
Let donuts cool on a rack.
In a small bowl, mix powdered sugar and water.
Stir until it is a thick liquid.
Drizzle over the donuts.
Dust the donuts with the shredded coconut.
