Grandma's Brussels Sprouts and Bacon

This easy roasted Brussels sprouts and bacon recipe is straight from my Grandma's recipe book. It is a comforting side dish that is perfect for holidays or all year round!

This recipe was created out of the necessity for simplicity. My family is a little hesitant to eat Brussels sprouts, but if I add some bacon, and they will dig right in! Is your family picky like this? I would love to hear how you convince your family that Brussels sprouts can be delicious!

Serve this recipe at Thanksgiving or as a side dish with any meal!

Why Make This Recipe:

  1. Bacon really adds good flavor to the Brussels sprouts. The flavors roast together, and even your picky eaters will want to try them.
  2. You can make this recipe ahead and bake it when you need it.
  3. Use leeks or onions. You can see the bacon and leeks mixed in...the flavors all caramelize together in the pan as you roast it.

How to Make Roasted Brussels Sprouts:

Step 1: Grab a sharp knife and a cutting board. Use the knife to slice the stem from each Brussels sprout. Next, slice the sprouts in half. This allows the seasoning and oil to penetrate throughout the sprout. Some outer leaves may fall off, but that is okay.

Step 2: Next, slice the leek or onion into thin slivers.

Step 3: Heat a skillet over medium heat. Add the bacon and leeks. Flip the bacon over, so both sides cook evenly. Cook until the bacon is finished cooking. Cooking time may vary depending on how thick the bacon you use is.

Use high-quality olive oil. It does make a difference!

Step 4: Use a sharp knife to chop the cooked bacon. Pour the bacon and onion mixture into the chopped Brussels sprouts. Toss with olive oil and add to a 9x13 baking dish.

Step 5: Bake at 375º F for 20 minutes. Remove the pan from the oven and stir the Brussels sprouts. Put the pan back in the oven for an additional 15 minutes.

How to cut Brussels sprouts:

The easiest way to chop Brussels sprouts is with a sharp knife. I cut off the end on the bottom (that part where it is attached to the stalk). Next, cut the Brussels sprout in half.

Can you use sliced or shaved Brussels sprouts in this recipe?

You can use sliced or shaved Brussels sprouts in this recipe. Please note if you use shaved Brussels sprouts, the cooking time will be a LOT less, so keep an eye on them as they cook.

Can you cook this recipe stove-top?

You can definitely make this recipe stove-top by cooking the Brussels sprouts and bacon in a cast-iron skillet.

How do you store roasted Brussels sprouts?

Store leftover Brussels sprouts in an airtight container. This side dish will keep fresh for up to 4 days. Reheat in the oven so the sprouts crisp back up.

Equipment

  • 9x13 pan

Ingredients
  

  • 1 pound Brussels sprouts
  • 6 slices bacon
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅓ cup leeks
  • 1 tablespoon canola oil or other light oil

Instructions
 

  • Preheat the oven to 375º F.
  • Wash the Brussels sprouts. Use a sharp knife to cut the base stem off. Slice the Brussel sprout in half. Repeat with all of the sprouts. Set the sprouts aside in a large bowl.
  • In a pan, cook the bacon slices until they are crispy.
  • Chop the bacon and add to the Brussels sprouts in the bowl. 
  • Add salt, pepper, oil, and leeks to the bowl. Toss to coat.
  • Add the Brussels sprout mix to a greased baking pan. Bake for 20 minutes, remove the pan and stir the Brussels sprouts. Place the pan back into the oven and bake for another 15 minutes.
  • Serve hot.

Notes

  1. Slice your Brussels sprouts in half vertically.
  2. Many ask if you can use precooked bacon, you can but you will not have the bacon grease to help roast and flavor the Brussels sprouts.
  3. You can make this recipe stovetop as well. Add the oil and bacon to a 12" cast iron skillet. Add the Brussels sprouts and cook until the sprouts are soft.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.

      Good morning, feel free to use onions. I recommend sweet onions, but yellow onions are also good.

    Roasted brussel sprouts are so delicious. I love the sound of this recipe with the inclusion of the bacon and the leeks - I may be able to convince the rest of the family to eat them with those ingredients too!

    My family is super picky when it comes to vegetables, and we don't eat anywhere near enough brussels sprouts (mainly at Christmas time only). Perhaps this will convince them all to try them at any other time of the year! 😉
