This ground pork soup recipe is a hearty soup that not only makes a great meal but also packs well in a Thermos for work or school.
Ground pork is as easily used in recipes as ground beef or ground turkey. It has a hearty flavor, but it is a little higher in fat than other ground meats.

Tips For Sucess:
- Drain and rinse the black beans. This helps with the flavor.
- For some extra spice, add a can of roasted green chiles.
Ingredient Notes:

- Ground Pork - As mentioned above, you can use any ground meat in this recipe.
- Diced Tomatoes - I prefer to use no-salt-added tomatoes. It is easier to add seasonings than subtract them, and regular canned tomatoes can have too much salt.
- Vegetables - Onions, zucchini, or any veggies you have on hand.
- Chicken Broth - I use low sodium, but regular or bone broth is also fine.
- Seasonings - Cumin, chili powder, and salt.
- Oil - Any cooking oil is fine.
- Cilantro - Fresh cilantro adds a nice flavor.
- Gluten Free Macaroni - There are not a lot of brands of gluten free pasta that can hold up to sitting in soup. I recommend either Jovial GF or Tinkyada brands.

How to cook gluten free macaroni:
Note, when using gluten free macaroni for this soup recipe, there are some tips to make sure your pasta stays al-dente and doesn't turn to mush. You can follow these steps to keep your pasta from getting mushy:
- Cook the pasta according to the package directions. Every brand of gluten free pasta is made with different ingredients that all seem to need different cooking times.
- Drain the pasta immediately into a colander. When pasta sits in a colander, it continues to cook!
- Dump the pasta in a bowl of iced water. This halts the cooking process so that your pasta stays firm.
How To Make Gluten Free Chili Mac Soup:

Step 1: Cook the gluten free macaroni according to package directions as I discuss above. Do NOT cook the pasta in the soup, or you will end up with a mushy mess.

Step 2: Add the oil to a pan and heat for 1 minute on medium heat. Add in the onion and vegetables and cook for 3 minutes.
Step 3: Add the ground pork and cook until the meat is browned.
Step 4: Add the meat and soup ingredients to a soup pot. Cover and bring to a boil, then lower the heat to a simmer. Cook for 20 minutes so the flavors all blend in together.

Step 5: Serve with a dollop of sour cream, shredded cheddar, and fresh cilantro.
This is my favorite product! You can freeze leftover soup, pasta sauce, chili, stews, and even smoothies in single-serving portions!
Tips and Recipe FAQ:
You can use any ground meat to make this chili mac recipe...even bison! If you would like this recipe to be low-fat, use ground turkey or ground chicken.
This soup will keep fresh for up to 4 days in an airtight container or for up to 4 months in the freezer.
You can easily freeze this soup recipe. I like to use Souper Cubes, pictured above, to make frozen single-serving portions so they are easy to heat and use.

Ground Pork Chili Macaroni Soup

- 1 pound ground pork * see note
- 1 small onion diced
- 14 ounces black beans rinsed and drained
- 14 ounces diced tomatoes * tomatoes and the juices
- 14 ounces tomato sauce
- 3 carrots chopped
- 2 zucchini chopped
- 2 cups gluten free macaroni
- 2 cups chicken broth
- 2 cups water
- 1 clove garlic
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 ½ teaspoons ground chili powder
- ½ teaspoon ground chipotle chili pepper
- 1 teaspoon salt
- ¼ teaspoon black pepper
- sour cream cilantro and cheese for garnish.
Instructions
- In a large pot, heat olive oil on medium heat.
- Cook the onion, carrot, zucchini and garlic for 3 minutes
- Add the ground pork and brown.
- Add water, chicken broth, tomatoes and sauce, beans, broth, all spices.
- Stir then cover the pot.
- Reduce heat to medium low and bring to a boil.
- Reduce heat to a simmer for an additional 20 minutes.
- Add the cooked pasta and serve.
- Serve with a dollop of sour cream, cheddar cheese and cilantro.
Notes
- If you don't have ground pork, use ground turkey or ground beef. Any ground meat will taste delicious!
- I recommend using no-salt-added diced tomatoes if possible. If you use regular, you may need to adjust the amount of salt added.
- Feel free to use any veggies you have on hand.

We don't use ground pork very often since I always have trouble finding a good way to use it so it's not so gummy. But I bet serving it up in a soup is great since the broth must help to soften it while picking up all the flavors! It looks delicious!
