Ingredient Notes:

  • Cashews – I prefer raw cashews, so the honey flavor bakes in easily.
  • Honey – You do not have to use high-quality, expensive honey in this recipe. Use wildflower or citrus blossom honey varieties, which are lower cost.
  • Butter – You can use unsalted butter, as I did, or salted butter. Butter adds some creaminess.
  • Salt – I used basic sea salt. You can also use Himalayan or kosher salt.

Substitutions:

  • Substitute the honey for maple syrup (pure maple syrup!)
  • Butter – If dairy-free, you can use coconut oil or plant-based butter.
  • Use roasted salted cashews for a salty-sweet flavor.

I always recommend mixing any batter by hand. That means don't use a stand mixer. Mixing by hand means your baked goods will turn out light and fluffy. How To Make Honey Roasted Cashews:

Step 1: Pour the raw cashews into a large mixing bowl. Be sure to check for any broken shell fragments. It is fine if some are broken pieces of cashews.

Step 2: Melt the butter in a microwave-safe container, then add the honey to the container. Mix well. The warm butter will help soften the honey to coat your cashews evenly!

Step 3: Pour the honey onto the nuts. Add salt (the amount is a personal preference.) Use a large spoon to toss to mix the nut mixture well to coat all of the nuts. Feel free to add a little cinnamon to add some more flavor!

Step 4: Dump the cashews onto a parchment paper-lined baking tray. Spread the nuts out so they take up the whole baking sheet. Ensure the nuts are flat on the baking surface and not on top of each other.

Step 5: Bake at 300 F degrees for 8 minutes. Remove the tray from the oven and stir the nuts around. Re-spread them out and bake for another 5-7 minutes. You want to be careful not to burn these sweet roasted cashews, so set a timer!

Flavor Variations:

  • Add sesame seeds to make them like honey sesame candy.
  • Try adding ½ teaspoon cinnamon when coating your cashews
  • Sprinkle the cashews with unsweetened shredded coconut. It toasts lightly during baking for a delicious flavor.
  • Dust them with sugar. Not only does this help prevent the cashews from sticking together, but it also adds more sweetness.
  • Give them some spice with a little cayenne pepper!
  • Use fresh peanuts, which cost a fraction of the cost of cashews.

How To Roast Cashews in a Pan:

If you want to roast your cashews in a pan instead, you can do this in a hot cast-iron skillet. Heat your skillet with a teaspoon of coconut oil (or light oil) and toss the raw cashews coated in honey and butter into the pan. Stir frequently on medium-low heat for 8-10 minutes.

I like to store the roasted nuts in a mason jar with the lid screwed on. If you do not have a mason jar, be sure to use an airtight container. The honey cashews should keep up to 3-4 days if they last that long.

Ingredients
  

  • 2 cups cashews or nuts
  • ¼ cup honey
  • 2 tablespoons melted butter
  • teaspoon salt

Instructions
 

  • Preheat the oven to 300 F degrees.
  • In a small microwave-safe bowl, add the butter. 
  • Microwave for 25-30 seconds until the butter is melted. Add the honey and stir to mix and soften the honey. Add the salt (to taste.)
  • Pour the honey mixture onto the nuts and toss to coat.
  • Spread parchment paper over the baking sheet and dump the nut mixture into the baking sheet. Use a spoon to spread out the mixture so the nuts are all flat and not bunched up. This will help them bake evenly.
  • Bake for 8 minutes. Remove from the oven, stir the nuts and bake another 5-8 minutes.
  • Remove from the oven and allow to cool.
