I had the pleasure of talking to Huong, owner of Le Quy Restaurant in Campbell, CA about his gluten free menu offerings. This has been a favorite restaurant of ours since they opened almost two years ago. Huong is one of those owners that spends time getting to know his customers, and he proudly can say he knows at least 80% of his customers. The restaurant is clean and always busy.
Huong taught me how to make traditional spring rolls and I will share the recipe in the accompanying post so you can make them yourself at home.
Q: What inspired you to open a restaurant?
A: I was in the high tech industry. My job was being relocated to Michigan, and I didn’t want to leave the Bay Area. Not only do I love to cook, but I also have a lot of management experience. I decided to take a risk when I saw this restaurant space become available. It has been a lot of hard work, but it has also been very rewarding.
Q: You told me that you use natural ingredients. Can you tell me more about this?
A: We use no additives at Le Quy. Our Pho is cooked with real chicken with the bones. We use no bouillon, msg, or any other artificial ingredients. Everything is made from scratch. (We can personally attest to the Pho being authentic and delicious.)
Q: What led you to have so many gluten free options?
A: My son is allergic to gluten and I know how hard it is for people who are gluten free to find good food. Vietnamese food is mostly gluten free, there is very little wheat in my country.
Q: How do you handle the gluten free food in your restaurant?
A: Every gluten free item is indicated on the menu by a gluten free symbol. I have a separate fryer for gluten free foods, and I have separate water for boiling noodles. All gluten free sauces (gf soy sauce, hoisin, and peanut sauce) are in bottles (San J brand) to prevent contamination. All of my staff has been trained how to handle gluten free foods and to keep them separate from any items containing gluten. There are very few gluten items on my menu, but we keep those dishes separate from any gluten free items.
