Still too hot to use the oven? These healthy no-bake seedy Honey Coconut Bites are a perfect cookie treat your whole family will enjoy. They are gluten free, dairy free, and vegan. This is one of the more creative coconut snacks you will find :-).
I am so ready for fall.
Not because I like cold weather…I hate it.
More because I love when temperatures are back to the 70s and I can use my oven again.
There are other reasons I love fall…especially the fall foliage. Unfortunately, where we live in the Bay Area, we really don’t see a lot of physical signs of fall. We don’t get a lot of the vibrant fall foliage that many parts of the country get. If we are lucky, a few trees will have red leaves…but they are in the minority.
I remember growing up in New England. Our family would go on foliage “drives” just to see all of the beautiful colors. As kids, we really didn’t appreciate these drives unless they ended at an ice cream shop :-).
Liquid ingredients ready to blend.
One of the stars of this recipe is a new seed and ancient grain blend I found at Trader Joe’s.
All of the ingredients are mixed together.
These bites are easy to make either in bite-sized cookies or spread the mixture out in a pan and make bars.
