Still too hot to use the oven? These healthy no bake seedy Honey Coconut Bites are a perfect cookie treat your whole family will enjoy. They are gluten free, dairy free, and vegan.
I am so ready for fall.
Not because I like cold weather…I hate it.
More because I love when temperatures are back to the 70s and I can use my oven again.
There are other reasons I love fall…especially the fall foliage. Unfortunately, where we live in the Bay Area, we really don’t see a lot of physical signs of fall. We don’t get a lot of the vibrant fall foliage that many parts of the country get. If we are lucky, a few trees will have red leaves…but they are in the minority.
I remember growing up in New England. Our family would go on foliage “drives” just to see all of the beautiful colors. As kids, we really didn’t appreciate these drives unless they ended at an ice cream shop :-).

One of the stars of this recipe is a new seed and ancient grain blend I found at Tarder Joe’s.
All of the ingredients are mixed together.
These bites are easy to make either in bite sized cookies, or spread the mixture out in a pan and make bars.
- 1/3 cup raw honey
- 1/3 cup coconut oil, melted
- 1 cup shredded coconut, unsweetened or lightly sweetened
- 1/2 cup super seeds from Trader Joe's
- 2/3 cups toasted sunflower seeds
- In a large bowl, add wet ingredients and mix.
- Add in dry ingredients and mix well.
- Spray coconut oil in a pan or mini muffin tin.
- Pour in seed mixture and press down to flatten in.
- Chill for 2 hours.
- Cut and serve.
