Each recipe card says what diet the meal is for. See the portobello amaranth card? It says Vegan and Gluten free in the top left hand corner. I love that everything is clearly labeled so there are no mistakes. The instructions are so easy to follow, even my teens can make these meals.
Healthy Dinner in 30 minutes
The first meal we made was this Tomatillo Chicken dish. The flavors in this dish were absolutely delicious. Even my picky eater loved this chicken! I love that this whole healthy dinner was ready in 30 minutes.
To start this dish, pull all of the ingredients together. (Look for the purple stickers that match the recipe card!)
Cook the chicken breasts in a frying pan.
Add the vegetables and sauce. Simmer according to the directions.
Another dish we really loved was the portobello mushrooms with amaranth. I haven’t done much vegan cooking, but I loved this dish. Vegan intimidates me a bit. Balancing nutrition and proteins is important so you don’t feel hungry 30 minutes after eating a meal.
My son helped me with this recipe. He is a die-hard carnivore so I was curious to get his take on a meal with no meat.
The sauce the mushrooms and amaranth are in was so full of flavor. I didn’t even miss meat! My son liked the flavor of this vegan dinner. Well, except for the zucchini…but that is probably normal for a kid.
The last meal-kit sent to me isn’t shown. It was a delicious Mediterranean cod dinner. I guess it is confession time. Mr. Fearless Dining and I had a date night planned. My kids decided to make this for themselves for dinner while we were out. I can’t blame them, heck, I can’t even get mad. They ate fish willingly.
