    This Italian sausage stuffed peppers is an easy, 3-ingredient appetizer that is perfect for entertaining. Sausage tuffed peppers are popular for game day parties, holiday parties, or for any fun get-together with friends.

    For our get together, I am making a lot of fun appetizers, but these pepper jack cheese and sausage stuffed mini peppers are going to be one of the highlights. There is a fun combination of flavors packed into this bite-sized treat.

    This Italian sausage stuffed peppers recipe is one of my favorites because it is so quick and easy to make. You can make it in about 20 minutes and it is a popular appetizer that everyone loves.

    Ingredient notes:

    • I used Aidell's Sweet Italian Sausage for this recipe, this brand makes a lot of fun flavors of sausage. Jimmy Dean or other gluten free sausages also work, just double-check the ingredients!
    • If you prefer to cook sausage, you can buy sausage links and cook them stovetop..

    Recipe step by step directions:

    Sweet mini peppers cut in half on a baking tray

    Step 1: I used these cute little fresh sweet mini peppers. I sliced them in half and removed the seeds.

    Stuffed peppers with shredded cheese on top. They are ready to bake.

    Step 2: Add browned mild Italian sausage and grated pepper jack cheese. Top with freshly chopped scallions.

    Step 3: Bake at 375º F for 15 minutes until done. Serve hot.

    Cheese ideas?

    You can use any cheese you like in this recipe. Just pair flavors so that the flavor sausage you use matches the cheese. Here are some good cheeses if you don't have pepper jack on-hand:

    • Cheddar
    • Mexican cheese blend
    • Mozzarella

    Fun swaps:

    • Fill the sweet mini peppers with cream cheese and wrap in bacon.
    • Chop the mini peppers up and serve on top of chili
    • Use sliced mini sweet peppers in this delicious gluten free ramen soup recipe.

    Can you make this recipe dairy-free?

    You can definitely make this gluten free by using Daiya or Kite Hill dairy-free cheeses. There are other brands of dairy-free cheese, but these two I have used and my family likes them.

    How long do you bake mini sweet peppers?

    I baked my stuffed peppers for 15 minutes until the peppers soften and the cheese melts.

    How long will these stuffed peppers keep?

    These stuffed peppers will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

    Can you make this using jalapeños?

    If you love spicy, you can definitely use jalapeños to make this Italian stuffed peppers recipe.

    Equipment

    • Cast iron skillet
    • 9x13 baking dish

    Ingredients
      

    • 1 cup package mini peppers
    • 12 ounces Italian mild sausage
    • ½ cup Pepper Jack cheese shredded
    • ¼ cup scallions

    Instructions
     

    • Preheat oven to 375º F.
    • Spray olive oil onto a baking sheet.
    • Cut peppers in half lengthwise and remove seeds.
    • Place on the baking sheet.
    • In a pan on medium heat, brown sausage.
    • Remove and cut into chunks.
    • Place a piece of sausage in each pepper.
    • Top with shredded pepper jack cheese.
    • Bake for 15 minutes until cheese is melted.
    • Serve hot topped with scallions.

    Notes

      These look awesome, and I love how quick and easy they are. No office pool here as we work from home. Being in Charlotte, I suppose we should be happy that the "home' team is in it, but I spent 20 years in New England and still remember the first Super Bowl the Pats won.
