There is a new mantra in San Francisco courtesy of Proposition Chicken. Fried, Flipped, or Fake. You can even get all three versions gluten free! Yes. You heard that right….even the fried chicken because Proposition Chicken has a dedicated gluten free fryer.
Lets talk about what Fried, Flipped, or Fake mean.
First up, fried. If you are looking for gluten free fried chicken, you can have it here. Proposition Chicken uses a tapioca starch blend that fries up nice and crispy.
Second, flipped. This is a rotisserie chicken that is marinaded in a lemon, garlic, and parsley marinade.
And lastly, fake. Fake here translates into a crispy BBQ tofu steak. This can also be done gluten free.
Proposition Chicken is fairly new to the restaurant scene, opening in September of 2013. When Ari, the owner was coming up with his concept, he really wanted to be able to accommodate gluten free diners safely. He put in a separate fryer just for gluten free orders. He has a separate toaster, cutting boards, and knives.
All of the chicken served at Proposition Chicken is from Mary’s Natural free range and is air chilled for freshness. Mary’s raises their chickens with no hormones, no antibiotics, and have no added preservatives. Every sauce, spice blend, marinade, soup, stock, and dressing is made in house from scratch, so there is full control over the ingredients used. This makes it very easy to keep gluten out of the process.
