I am still trying to use up all of the lemons in our lemon tree. I have created several dessert recipes for you lately, so I wanted to include an easy herb lemon chicken recipe for you to try too.

I can't wait to share this new recipe with you. I hope you don't mind that I am sharing pictures of my new herb garden because I was able to grow my own herbs for this wine pairing! We have had a drought here in CA for a few years and I haven't had a garden in ages.
Last week we decided to revive our old garden boxes. It was so fun going to the local garden center to choose what herbs to plant!
I have always preferred using fresh herbs over dried. The flavors enhance what I cook.
I now have two planter boxes, one is full of tomato plants and the other (pictured here) is full of thyme, basil, chives, mint, and cilantro...and a few cantaloupe plants at the far end :-). I love to use fresh herbs when I cook and now I can just walk outside and pick what I need!
After trying several of CK Mondavi's wines, I knew their Chardonnay was the wine I wanted to create a recipe around! This wine has a crisp aroma of lemon and citrus with flavors of apple, pear, and oak. I was surprised at the depth of this Chardonnay and at only $6.99 a bottle, it is a fabulous deal.
This easy recipe makes four lemon herb chicken breasts, perfect for a family! Double the recipe for a crowd :-).
The first step to making this recipe is to open a bottle of the CK Mondavi Chardonnay :-).
Sauté the leeks with garlic, butter, and olive oil over medium heat until softened.
Add the chicken, herbs, and wine. Cover and cook on medium-low heat until your chicken measures an internal temperature of 165 degrees. Serve over wilted spinach, rice, or quinoa.

Easy One Pan Gluten Free Chicken Piccata
- 1 pound chicken breasts (I bought mine thinly sliced.)
- 1/4 cup gluten free flour blend
- 1/4 teaspoon salt
- 1 clove garlic minced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 large leek sliced thinly
- 1/4 cup capers drained
- 1/2 cup white wine
- 2 teaspoons lemon juice
- In a skillet, melt butter and olive oil over medium heat.
- Add leeks and garlic. Saute for 5 minutes.
- Put flour in a bowl and dredge chicken in flour.
- Add chicken to the pan and cook until the chicken is almost done. (Turn chicken part way through the cooking so both sides are evenly cooked.)
- Add wine, lemon juice, and capers. Turn down the heat and simmer. Flip the chicken to make sure both sides are coated.
- Serve warm. (*Optional, sprinkle parmesan cheese over the top.)
