I am still trying to use up all of the lemons in our lemon tree. I have created several dessert recipes for you lately, so I wanted to include an easy lemon chicken recipe for you to try too.

Last week we decided to revive our old garden boxes. It was so fun going to the local garden center to choose what herbs to plant!
I have always preferred using fresh herbs over dried. The flavors enhance what I cook.
I now have two planter boxes, one is full of tomato plants and the other (pictured here) is full of thyme, basil, chives, mint, and cilantro…and a few cantaloupe plants at the far end :-). I love to use fresh herbs when I cook and now I can just walk outside and pick what I need!

How to make this healthy lemon chicken recipe:
The first step to making this recipe is to open a bottle of the CK Mondavi Chardonnay :-).
Sauté the leeks with garlic, butter, and olive oil over medium heat until softened.
Add the chicken, herbs, and wine. Cover and cook on medium-low heat until your chicken measures an internal temperature of 165F degrees. Serve over wilted spinach, rice, or quinoa.
Delicious Side Dishes to Enjoy with this Lemon Chicken Breast Recipe:
An easy pan cooked lemon herb chicken breast recipe.
- 4 chicken breasts
- 3 tablespoons butter
- 2 cloves garlic
- 1 leek sliced
- 1/4 cup CK Mondavi Chardonnay
- 1/4 cup lemon juice
- 1 tablespoon fresh basil
- 2 teaspoons fresh thyme
- 1 tablespoon lemon zest
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon olive oil
In a skillet, add butter, olive oil, garlic, and leeks. Sauté on medium heat until softened.
Add chicken and the rest of the ingredients to the pan.
Cover and turn the temperature to medium-low. Cook for 8 minutes and then flip the chicken breasts over to the other side to cook.
Cook until the internal temperature is 165F degrees. Serve hot.
