Some of my favorite salads include both vegetables and fruits. My kids will even eat these kid-friendly salads!
This grilled chicken and watermelon is served over baby kale. Baby kale don’t have the bitterness of fully grown kale and it is much easier for kids to enjoy it. (And if my picky child will eat this, yours will too!)
Spiralized Daikon Salad. If you haven’t tried daikon yet, look for it the next time you are out grocery shopping. Daikon is a mild radish that looks like a long white carrot. Add in peppitas and fresh cilantro and you have fancy salad that is popular for dinner parties.
Chef Leo at California Cafe shared this recipe with me and it quickly became one of my kids’ favorite salads. This Kale and Apple Salad is delicious! (Unfortunately California Cafe is no longer in business, but it will live on through this flavorful salad.)
