This shaved Brussels sprout and fresh apricot salad is a beautiful salad that even those “non-Brussels sprout people” will enjoy.
Now I know you, my readers, love the sweet gluten free recipes, stats don’t lie :-). I hope you can bear with me this week because I really need to get all of that sugar out of my system.
Do you have Brussels sprout haters in your family? I am the only one who will eat them…and I love them. They are delicious cooked, or in salads. Now I am not expecting a miracle, I know my kids won’t touch this salad with a ten foot pole. It isn’t slathered in ranch dressing, so I am not even going to attempt to get them to like it.
The real test is to see if Mr. Fearless Dining, aka Brussel sprout hater extraordinaire, will eat them.

Shaved Brussels Sprout and Apricot Salad
- 1 package shaved Brussels sprouts (If you can't find them shaved put 20-25 Brussels sprouts into a food processor.)
- 3 fresh apricots sliced
- 3 scallions choppd
- sprouts I used a package from Trader Joe's
- 3 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 fresh garlic clove minced
- salt/pepper to taste
In a large salad bowl, add all vegetables and apricots.
In a small bowl, add we ingredients and mix well.
Toss dressing into Brussels mixture and allow to sit for 5 minutes so they absorb the flavors.
