Have you recovered from National Donut Day? I must say, after all of the delicious gluten free donuts I made last week, I am ready for some healthy recipes.

Now I know you, my readers, love the sweet gluten free recipes, stats don’t lie :-). I hope you can bear with me this week because I really need to get all of that sugar out of my system. Maybe this Brussels sprout salad will help me feel better.

Brussels Sprouts

Do you have Brussels sprout haters in your family? Brussels sprouts look like mini cabbage heads. I am the only one who will eat them in our family…and I love them. They are delicious cooked, or in salads. Now I am not expecting a miracle, I know my kids won’t touch this salad with a ten foot pole. If a veggie isn’t slathered in ranch dressing, my kids won’t entertain the idea of eating it.

The real test is to see if Mr. Fearless Dining, aka Brussel sprout hater extraordinaire, will eat them.

I found my Brussels sprouts pre-shaved in a bag at Trader Joe’s. If you have a food processor, you could easily shred your Brussels sprouts easily for this quick salad recipe. This recipe is paleo, whole 30, vegan, and gluten free!

Easy Brussels sprout and fresh apricot salad.

Ingredients
  • 1 package shaved Brussels sprouts (If you can't find them shaved put 20-25 Brussels sprouts into a food processor.)
  • 3 fresh apricots sliced
  • 3 scallions choppd
  • sprouts I used a package from Trader Joe's
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 fresh garlic clove minced
  • salt/pepper to taste
Instructions
  1. In a large salad bowl, add all vegetables and apricots.
  2. In a small bowl, add we ingredients and mix well.
  3. Toss dressing into Brussels mixture and allow to sit for 5 minutes so they absorb the flavors.
