I may be a nut, but I have become addicted to adding fresh fennel to salads. This fresh shaved fennel salad is a beautiful salad that is so easy to make.
The subtle licorice flavor works so well with the fresh raspberries and apricots in this salad. Even my kids loved it :-).

What is Fennel?
It is time to do a bit of research about fennel and learn why it is such a popular vegetable. When I first saw fennel in my farm box, I wondered what do I do with fennel? I didn’t really know much about fennel.
My kids are stubborn and have not been willing to try fennel, so any data on nutrition may push them over the edge to try it again :-). (Or it will provoke a big eye roll!)

We are still getting a lot of fennel here in our farm box, and I am thankful that it is such a versatile vegetable 🙂 It is also the very beginning of the apricot season and I felt like the two flavors would accent each other beautifully in a salad.

How to make a fennel salad:
- 2 heads fennel, sliced
- 1/2 cup fresh raspberries
- 3 fresh apricots, sliced
- 2 tablespoons olive oil
- 3 tablespoons Trader Joe's Orange Muscat Vinegar
- In a small bowl, add olive oil and vinegar. Mix well then toss into salad.
