Instructions:

  • 1 pound chicken legs
  • 14 ounce can full-fat coconut milk
  • ½ cup carrots
  • ½ cup sweet potatoes
  • â…“ cup onion optional
  • 1 teaspoon salt
  • 1 tablespoon curry powder
  • 1 tablespoon turmeric

Instructions
 

  • Put the coconut milk into the slow cooker.
  • Add the seasonings and stir.
  • Place the chicken in the sauce and spread the sauce onto the chicken.
  • Add the vegetables.
  • Cover and set to cook for 4 hours on high or 5-6 hours on low heat.

  2. To cook this stovetop, add the ingredients to a pot and cook on medium for 30 minutes. Check doneness by using a meat thermometer. Insert into a drumstick and if the internal temperature is 165º F, the chicken is done.

    This was a delicious meal and so easy to whip together! I loved the flavor of the curry and the drumsticks were fall off the bone. I ended up 1.5x the curry powder and turmeric.
