Super Fun Gluten-Free Birthday Cake Batter Waffles

No matter what the occasion, your family is going to LOVE these gluten free funfetti cake batter waffles! Colorful sprinkles, ice cream, hot fudge, these colorful waffles are just crazy good!

Summer is the time of birthdays in our house. What better way to celebrate the birthday “person” than to wake up to a special treat?

Now please don’t think I am a terrible mom for making this sugary treat for breakfast. It is summer and my teens sleep super late right now. They usually stumble out of bed early to eat, then they go back to bed. This is the “second breakfast” celebration :-).

Gluten-Free Waffles

Waffles are a delicious breakfast treat. You can make gluten free waffles from scratch, adapt a mix to be healthier like this easy waffle hack, or buy them frozen. (The frozen gluten free waffles flatten to make awesome waffle ice cream cones!)

If your crew loves waffles and cake, this is the perfect combination to make everyone happy. I used a wonderful gluten free cake recipe of mine to make the waffle batter for this recipe. (I know I really need to post my vanilla cake recipe….it makes delicious birthday cakes and cupcakes.)

My family insisted we drizzle hot fudge on these waffles to make a gluten free waffle Sunday out of it. Who am I to complain? (Don’t tell my family, but I added almond flour to the waffle cake batter in order to add a little protein to balance things out :-).

Gluten free cake batter waffles with tons of rainbow sprinkles.

Ingredients
  • 1 1/2 cups gluten free flour blend
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 3 eggs
  • 1/2 cup butter melted
  • 1/4 cup rainbow sprinkles
  • 1/2 cup almond milk
Instructions
  1. Pre-heat a waffle iron.

  2. In a large bowl, add all dry ingredients. Whisk to blend.

  3. In a medium sized bowl, add all of the wet ingredients. Whisk to blend.

  4. Pour the wet ingredients into the dry ingredients, add the sprinkles and mix well.

  5. Add a little batter to the hot waffle iron and cook for 4 minutes until done. Use the rest of the batter to continue making waffles.

  6. Top with ice cream and hot fudge. Sprinkle more rainbow sprinkles on. Enjoy!
