If you love omelettes, this turkey and heirloom tomato omelette is a wonderful breakfast option for even your busiest mornings.
Have you been to your local farmer’s market lately? Heirloom tomatoes are in the peak of their season. They come in all shapes, colors, and sizes. I found these incredible deep red heirloom tomatoes at my favorite organic farmer’s stand and I was so excited to try something new with these beauties.

My daughter likes to eat eggs for breakfast….especially omelettes. She has learned how to make her own omelettes, but as any typical teenager, it is hard for her to get up early enough on a school day to make one for herself. I have sort of taken this on each morning to make sure she gets enough protein to start out her day. (She made the JV volleyball team this year and with long practices and at least two big games a week, she needs to eat healthfully so that she can perform at her best.)
This omelette is easy to make. We sliced the heirloom tomatoes thinly and layered them under the Foster Farms All Natural Sliced Turkey. It is really easy because the sliced turkey is the perfect width to go in an omelette.

In a cast iron pan, add egg and fresh thyme.
Add heirloom tomato, Foster Farms All Natural Sliced Turkey, and mozzarella cheese. Add the salt at the end because salt breaks down the egg and affects the fluffiness.
- 3 large eggs
- 1 tablespoon water
- Sliced turkey
- 2 heirloom tomatoes, thinly sliced
- mozzarella cheese
- 3 sprigs fresh thyme
- salt and pepper to taste
- Heat a cast iron skillet.
- In a small bowl, whisk eggs with water.
- Pour into hot skillet.
- Add fresh thyme.
- Allow to cook for 5 minutes on medium heat.
- Add tomato, turkey, and cheese.
- Allow to finish cooking.
- Fold omelette over ingredients.
- Serve hot.
