  2. They can be enjoyed during the holidays, like Hanukkah or serve as an appetizer.

Were you surprised when I said you could get crispy latkes in an air fryer? I have to be honest; my family was skeptical. Frying latkes in hot oil is a Jewish tradition that started all the way back in biblical times. You can get your air-fried latkes as golden brown as oil-fried!

Don’t get me wrong, oil-fried latkes taste amazing…it is just that my family is trying to be good and cut down on the fats. Not to mention the clean-up after frying food in oil…don’t get me started!

Air fryer gluten free potato latkes are a great way to keep your latkes low-fat, and they also make clean-up a breeze!

Ingredient Notes:

  • Potatoes – I recommend using russet potatoes because they are the best potato for frying.
  • Onion – I like to use yellow onions when making latkes. You can top the cooked latkes with green onions, too if you like!
  • Oil – Make sure the oil you use can tolerate high heat. That goes for spraying on the latkes in the air fryer and if you fry in a cast iron skillet. I recommend avocado or canola oils.
  • Gluten free flour – You can use any brand.
  • Eggs – Use size large.
  • Herbs – For this recipe, I used LiteHouse freeze-dried garlic and parsley.

NOTE: For Passover, use gluten free matzo meal instead of gluten free flour.

How To Shred Potatoes:

You can shred potatoes in three ways:

  • Using a hand or box grater is the least expensive way to shred the potatoes. To use a grater, manually rub the potato over the grates until it gets close to your fingers. I always worry when it gets close to my fingers.
  • You can also use a vegetable mandolin which has a handle to keep your fingers safe while grating!
  • The easiest way to grate potatoes is to use a food processor. It will shred all of your potatoes in seconds!

Recipe Step-By-Step Directions:

I decided to do a cook-off and created both air-fried and oil-fried latkes! What better way to experiment and see what we like? Are you ready to make these yummy gluten free latkes from scratch?

Step 1: The first thing you need to do is shred your potatoes and onions using one of the methods I mentioned above. Shred the potatoes into a large mixing bowl.

HINT: After you shred your potatoes, take a clean dish towel or paper towel and squeeze out some of the moisture from the potatoes.

If you don’t do this, your latke mixture will be very wet and won’t bind well when cooking. Trust me, soggy latkes are the worst, so dry your shredded potatoes first!

Step 2: Add the potato latke ingredients, including the beaten eggs, to a bowl. Add the Litehouse parsley and garlic, an egg, gluten free flour blend, sea salt, and black pepper. Mix well.

Step 3: I use a brush and brush oil on the bottom of the air fryer. You do not have to do this, but trust me when I say you need a little oil to improve the flavor of these latkes when cooked in an air fryer. 

Step 4: Add the potato mixture in a round shape to the air fryer. You want air to circulate around each latke, so don’t crowd them! Use the oil brush or spray oil and lightly coat the tops of the latkes with oil.

(Don’t use an oil like PAM…you want just oil without the additives.)  Cook at 400º F for 6 minutes per side. Open the air fryer and use a spatula to flip the latkes over so the other side cooks at the 6-minute mark.

Your gluten free latkes will get all crispy! Remove from the air fryer and repeat the process until they are all cooked.

Stovetop Directions:

  1. Heat your oil. Fill the bottom of a skillet or Dutch oven about an inch deep of oil.
  2. Be sure to use an oil with a high smoke point. I recommend using either avocado oil or canola oil. Some use peanut oil, but we steer clear of peanut oil just in case any of our friends have a peanut allergy.
  3. Heat your oil over medium heat to 375 F.
  4. To minimize the oil splattering, try using a Dutch oven for frying.
  5. Spoon some of the potato mixture into the hot oil and spread it around in an oval shape.
  6. Remove the cooked latkes to a baking sheet lined with paper towels to soak up the excess oil.

How hot should the oil be for frying latkes?

You will want your oil to heat to 375º F to fry your latkes stovetop.

What oils are best for frying latkes?

It is very important to use oils that are good in high-heat cooking. (Note: olive oil is not good at high temperatures!) My favorite high-heat oils are avocado oil, canola, and coconut oil.

Can you use other vegetables in your latkes?

You can use any root vegetables you like in your potato latkes.

How long will the latkes keep fresh?

These latkes will keep fresh for up to 4 days in an airtight container or up to 4 months in the freezer.

To thaw, place in the oven and bake at 325º F for 10-15 minutes until they feel crisp. You can reheat them in a microwave oven, but they will be soggier.


What potatoes are best for latkes?

I like using Yukon gold potatoes or russet potatoes to make latkes. I find white potatoes too waxy for latkes.

  • Add the potato latke ingredients including the beaten eggs and onion to a bowl. Add the Litehouse parsley and garlic, an egg, gluten free flour blend, sea salt, and black pepper. Mix well.

Air Fryer Directions:

  • Preheat your air fryer for 5 minutes to 400º F.
  • Brush a little oil along the bottom of the air fryer basket.
  • Add latke mixture onto the air fryer basket.
  • Use a spoon to shape and flatten the mixture.
  • Make sure to keep each latke separate so air can circulate around each latke.
  • Cook in the air fryer 6 minutes then use a spatula to flip each and cook an additional 6 minutes.

Oil Frying Directions:

  • Fill the bottom of a skillet or Dutch oven about an inch deep of oil. Heat your oil over medium heat to 375 F.

  4. To thaw, I don’t recommend the microwave because the latkes will turn out mushy. I thaw mine in an oven heated to 325º F. Bake 10-15 minutes until they are crispy again.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.
