Easy Cornmeal Pancakes

These simple cornmeal pancakes are gluten free. They make a great breakfast!

Ingredients:

Gluten Free Flour Blend + Cornmeal

Eggs  + Milk

Salt + Light Oil + Baking Powder

In a large bowl, add your dry ingredients and whisk to blend. You can use gluten free flour as I did, or any flour you have on hand.

Mix the wet ingredients in a small bowl. You can use regular milk or non-dairy milk. I used almond milk when I made mine,

These pancakes freeze beautifully so you can always have ready made pancakes for breakfast. Kids love them!

Mix up the wet and dry ingredients. You will get a nice smooth pancake batter. Let the batter sit for five minutes while the pan heats up.

Heat a skillet on medium heat with some oil. Use a scoop to drop pancake batter onto the pan. Cook until you see bubbles then flip them over.
