The Best Gluten Free Lemon Cake!

This delicious gluten free lemon cake is perfect for a birthday party!

Ingredients:

Gluten Free Flour Blend

Baking Powder + Salt

Eggs + Butter + Milk (or non-dairy milk)

Sugar + Vanilla Extract + Lemon Juice

Powdered Sugar + Lemon Zest

Add the dry ingredients to a bowl and whisk to blend them together. This is important to blend everything evenly.

Add all of the wet ingredients into a bowl and whisk to blend them together. Be sure to add the lemon juice and zest too.

This incredible gluten free lemon cake makes a great layer cake, sheet cake, or cupcakes! Top with creamy frosting!

Pour the wet ingredients into the dry ingredients. Mix them into a smooth cake batter. Be sure not to overmix the batter or your cake will be dense.

Pour the batter into greased cake pans. Bake at 350º F for 20-30 minutes depending on the size of your cake pans. Allow to cool.

Whip up the frosting in a standing mixer. You can make cream cheese frosting or buttercream frosting.

Allow the cake to cool. When it is cool, add a layer of lemon curd to a piece of cake. You can build the cake on a cake tray or plate.

Continue to layer your cake pieces with lemon curd and frosting.

Frost the outside of the cake then sprinkle lemon zest on top for decoration and extra flavor!
