Fluffy Gluten-Free Lemon Cupcakes

These lemony gluten free cupcakes are really easy to make!

Ingredients:

Gluten Free Flour Blend

Eggs  + Oil + Lemon Juice

Salt +  Baking Soda + Sugar

Vanilla + Non-Dairy Milk

In a large mixing bowl, add your dry ingredients and whisk to blend the ingredients together.

In a medium sized mixing bowl, add your wet ingredients and whisk to blend them together.

These fluffy homemade gluten free lemon cupcakes are perfect for a party. top with icing or frosting and sprinkles!

Pour the wet ingredients into the dry ingredients and mix the two until they are just barely mixed. Thi is the secret for fluffy cupcakes!

Fill a cupcake tin with paper liners. Fill each 3/4 full of cupcake batter. Bake the cupcakes for 22 minutes until done. Move to a cooling rack. Make the frosting or icing while they cool.

Top the cupcakes with frosting or you can make this sweet-tart lemonade icing to drizzle over the cupcakes! Both are equally delicious!
