Easy Gluten-Free Apricot Jam Bars

These gluten free apricot jam bars are so easy to make with just a few simple ingredients.

Ingredients:

Gluten Free Flour Blend

Sugar + Shredded Coconut

Your favorite jam or preserves

Butter + Egg + Salt

Add all of the dry ingredients in a bowl and whisk to blend. This is both the crust and topping! Be sure to use unsweetened coconut.

Pour the wet ingredients into the dry ingredients. Mix until you have a crumbly mixture. Split the amount in half.

These homemade jam bars are special. You can use any flavor jam! Enjoy fruity bars all year long! They are great for a bake sale!

Press half of the crust mixture into the bottom of a 9x13 pan. Use a flat glass bottom to press the crust down flat.

Sprinkle the remaining crust mixture over the jam layer. Use your fingers so it is fluffy on top. Bake at 350º F. for 25-30 minutes.

These gluten free jam bars are absolutely delicious! I used apricot jam to make these. Add in walnuts if you would like to add nuts. You can also drizzle melted white chocolate on top.
