For this recipe you need just a few simple ingredients. This cake is also dairy-free.


Add your dry ingredients to a bowl. Whisk them to blend all together. If your gluten free flour blend doesn't have xanthan gum, be sure to add 1 teaspoon.

Your cake batter should look like this. Add it to a greased cake pan and bake at 350º F. The time to bake will vary by cake pan size.


Let the cake cool. Add a layer of lemon curd, then add some vanilla buttercream to the bottom layer of cake. Add the next cake layer.

Whip up the vanilla frosting. You can use my buttercream or cream cheese frosting recipe. This works beautifully with the flavors from the lemon curd.
