Easy Gluten Free Peanut Butter Cookies

These soft gluten free peanut butter cookies are absolutely the best!!

Ingredients:

1 3/4 cups gluten free flour

1 tsp baking powder + 1/8 tsp salt

1/3 cup sugar + 13 TBSP butter

3/4 c brown sugar + 1/3 c sugar

1 1/4 c peanut butter + 2 eggs

1 tsp vanilla extract

1/4 c chopped peanuts (Optional)

Start with a soft creamy peanut butter. You can use creamy or crunchy peanut butter.

Mix up your wet and dry ingredients in a bowl. Mix them together to form a soft cookie dough.

Drop cookie balls of dough onto a cookie sheet. Use a fork to press down the cookies. Bake at 350º F.

Remove the cookies from the oven to a cooling rack. They are hot so be careful!
