Easy Gluten Free Peanut Butter Cookies
These soft gluten free peanut butter cookies are absolutely the best!!
1 3/4 cups gluten free flour
1 tsp baking powder + 1/8 tsp salt
1/3 cup sugar + 13 TBSP butter
3/4 c brown sugar + 1/3 c sugar
1 1/4 c peanut butter + 2 eggs
1 tsp vanilla extract
1/4 c chopped peanuts (Optional)
Start with a soft creamy peanut butter. You can use creamy or crunchy peanut butter.
This gluten free peanut butter cookie recipe is for those who love to eat peanut butter out of the jar with a spoon!
Drop cookie balls of dough onto a cookie sheet. Use a fork to press down the cookies. Bake at 350º F.
Enjoy these cookies any time! They freeze well. To freeze the extras, just put them in a zip style baggie.
