The Best Gluten Free Apple Pie

Don't forget to double the pie crust recipe for the top crust!
Mix your dry ingredients in a large bowl. Add the cold butter and cut the butter into the flour mixture until it looks like crumbs.
Mix up the rest of the wet ingredients and pour them into the flour butter mixture to form a dough. Add more flour if your dough is too sticky. Starchy gluten free blends may need that.
Place the dough on wax paper and roll the dough to a large circle with about 1/4 inch thickness. Be sure to dust the wax paper with gluten free flour so the crust doesn't stick.
Slice your apples and coat them in brown sugar and cinnamon. Put them into the pie crust. Spread the apples so they are evenly dispersed.
Roll out the top crust and use a cutting wheel to cut out strips. use these strips to weave the top crust. Brush the top with an egg wash and bake!
