  • 1 pound chicken breasts (I bought mine thinly sliced.)
  • 1/4 cup gluten free flour blend
  • 1/4 teaspoon salt
  • 1 clove garlic, minced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large leek, sliced thinly
  • 1/4 cup capers, drained
  • 1/2 cup white wine
  • 2 teaspoons lemon juice

  1. In a skillet, melt butter and olive oil over medium heat.
  2. Add leeks and garlic. Saute for 5 minutes.
  3. Put flour in a bowl and dredge chicken in flour.
  4. Add chicken to the pan and cook until the chicken is almost done. (Turn chicken part way through the cooking so both sides are evenly cooked.)
  5. Add wine, lemon juice, and capers. Turn down the heat and simmer. Flip the chicken to make sure both sides are coated.
  6. Serve warm. (*Optional, sprinkle parmesan cheese over the top.)
