Pepper Jack Sausage Stuffed Mini Peppers

  • 1 package mini peppers
  • 1 package First Street mild sausage
  • 1 block First Street Pepper Jack cheese shredded
  • scallions to top


  1. Preheat oven to 375 degrees.
  2. Spray olive oil onto a baking sheet.
  3. Cut peppers in half lengthwise and remove seeds.
  4. Place on the baking sheet.
  5. In a pan on medium heat, brown sausage.
  6. Remove and cut into chunks.
  7. Place a piece of sausage in each pepper.
  8. Top with shredded pepper jack cheese.
  9. Bake for 15 minutes until cheese is melted.
  10. Serve hot topped with scallions.
