Quick and easy pressure cooker baked blueberry oatmeal.

Ingredients
  

  • 2 ¼ cups whole oats
  • ½ cup brown sugar
  • 14 ounces canned coconut milk light or regular is okay
  • 3 cups water
  • 1 cup blueberries frozen or fresh
  • 1 teaspoon vanilla
  • teaspoon salt
  • ¼ cup gluten free flour blend

Instructions
 

  • Plug in your pressure cooker.
  • Pour ingredients into the pressure cooker.
  • Set to bake for 30 minutes.
  • Unplug when the machine is finished.
  • Allow pressure to dissipate according to pressure cooker instructions. Open carefully keeping your face away from the lid.
  • Serve warm.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
