Savory Crispy Cheddar Hash Brown Waffles

Ingredients
  

  • 3 cups shredded russet potatoes
  • 1 egg
  • 1 cup cheddar cheese
  • cup gluten free panko
  • ¼ cup scallions
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • teaspoon black pepper
  • 1 teaspoon olive oil spray

Instructions
 

  • Preheat your waffle iron.
  • Wash the russet potatoes. Shred them with a shredder into a bowl.
  • Use a paper towel to blot the extra moisture from the shredded potatoes.
  • Add all ingredients to the shredded potatoes and mix well.
  • Open the waffle maker and spray with olive oil.
  • Add a dollop of potato mixture to the waffle iron. Close the lid and cook for 5 minutes. (You may need to open the lid and check how the potato waffle is cooking. It may take longer based on how hot your waffle iron gets.)
  • Serve with sour cream, applesauce, or any topping you like.

Notes

These are delicious fried in a waffle maker but you can cook them stovetop if you don't have a waffle maker.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
