This easy gluten free cookie mix in a jar makes great gifts for the holidays. This cookie mix makes my famous Gluten Free Cowboy Cookies.

For One Mason Jar:

  • Determine how many mason jars you want to fill.
  • Remove the lids and clean the jars (if they are brand new.) Dry thoroughly.
  • Add the ingredients into the mason jar one at a time to layer the ingredients in this order: gluten free flour, brown sugar, baking powder and salt, chocolate chips, gluten free oats, and shredded coconut.

Write out these directions on an index card so the person you give the gift to knows how to make the cookies:

    To make the cookies:

    • 1. Preheat the oven to 350º F.
    • 2. Pour the cookie mix into a large bowl.
    • 3. Add 2 eggs, 1 teaspoon vanilla, and 11 tablespoons melted butter.
    • 4. Whisk the wet ingredients to mix.
    • 5. Pour the wet ingredients into the dry ingredients and mix until all of the ingredients are incorporated in the cookie dough.
    • 6. Line a cookie sheet with parchment paper.
    • 7. Use a cookie scoop to drop the cookie dough onto the parchment paper.
    • 8. Bake for 8 minutes. Remove the cookies from the oven and let cool on a rack.

    Notes

    1. This cookie recipe makes 24 Cowboy Cookies.
    2. I have tested this recipe with King Arthur Measure for Measure GF, Bob's Red Mill 1 to 1 GF blend, and Authentic Foods Multi Blend in this recipe. That doesn't mean others will not work, I just have not tested other flours.
    3. If your gluten free flour blend doesn’t contain Xanthan Gum or Guar Gum, please add 3/4 teaspoon.
    4. To make this recipe dairy-free, substitute the butter for vegan butter. Use a dairy free chocolate chip.
    5. It is critical to use certified gluten free oats if you are Celiac. Cross-contamination runs high in regular oats.
    6. These cookies will keep up to 4 days in an airtight container, or up to 4 months in the freezer.

    SPECIAL NOTE

    Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
