Gluten Free Pizza Rolls

These deliciously easy gluten free pizza rolls make a tasty family dinner. Take your gluten free pizza up a notch with these fun rolls.

Ingredients
  

  • 3 ½ cups gluten free flour blend * see note
  • ¼ cup olive oil
  • 1 cup warm water * see note
  • 2 ½ teaspoons yeast * 1 packet, see note
  • 1 teaspoon sugar or honey
  • ½ teaspoon salt
  • 2 eggs size large
  • 14 ounces pizza sauce Use store bought or my recipe in the notes below.
  • 2 cups mozzarella cheese

Instructions
 

  • Add 105º F water, oil, sugar, and yeast to a bowl. Stir and let it sit for 5 minutes until the yeast is bubbly. Add the rest of the wet ingredients and whisk to blend.
  • Add the 3 cups of the flour and salt to a bowl and whisk to blend it together. Pour the wet ingredients into the dry ingredients. Mix together into a soft dough.
  • Cover the bowl with plastic wrap or a clean towel and allow it to rise for 1 hour.
  • NOTE: I like my dough a little wetter for the rise. I feel it gets more rise.
  • Add the 1/2 cup remaining gluten free flour and mix into a dough. Let it sit for 10 minutes.
  • Dust a piece of parchment paper or the counter with gluten free flour. This will prevent it from sticking when you try to roll the dough. Place the dough onto the paper.
  • Use a rolling pin or your hands to flatten the dough to 1/3 to 1/2 inch thickness. Try to make it into a rectangle shape. Feel free to dust the dough with as much gluten free flour as you need so you can roll or press the dough flat.
  • Spread your pizza sauce over the crust. You can use my homemade pizza sauce linked in the ingredient notes, or make it fun with my easy gluten free alfredo sauce or nut-free pesto sauce recipes!
  • Add your toppings! Very carefully roll your dough lengthwise to make a big roll. If your dough sticks a little dust the roll next to the paper with a little flour.
  • Use a string to cut the rolls as you would cutting cinnamon rolls. Lay a piece of thread under a portion of the big roll and pull the two ends of the string together to cut the dough.
  • Place the rolls onto a baking sheet. Bake at 400º F for 15-20 minutes (the actual baking time will vary depending on how wide and tall your rolls are.)

Notes

  1. I used Cup4Cup for this recipe because it makes biscuits and bread more fluffy. That doesn't mean others will not work, I just have not tested other flours and I can not guarantee the recipe will work if you use other mixes.
  2. Xanthan Gum - If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1 teaspoon.
  3. To make this recipe dairy-free, you will need to use another flour blend because Cuup4Cup contains milk powder. Use a dairy-free cheese like VioLife or Daiya.
  4. Note, all gluten free flour blends are different and you may need some extra flour or water to make your dough the right consistency. Starchy blends may need a little more water while other blends may not need as much. 
  5. Always be sure your yeast is gluten free. Red Star Platinum is NOT gluten free!
  6. These pizza rolls will keep up to 3 days in the refrigerator, or for up to 4 months in the freezer.

You can fill these delicious gluten free pizza rolls with all of your favorite toppings. You can also vary the sauce as I mentioned above!
  • Pepperoni
  • Bell peppers
  • Sausage
  • Mushrooms
  • Spinach

Air fryer directions:

To make these gluten free pizza rolls in your air fryer, follow all of the directions up until the rolls are cut.
Preheat your air fryer to 400º F for 5 minutes. Place the pizza rolls into the basket of the air fryer. Cook for 12-15 minutes, or until done. Note: The actual baking time will vary depending on the size of your rolls.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
